OK, this salad dressing recipe is from my mother. But she makes the best salad dressing in the entire world, and worthy of mention.

I’ve watched her make it for I-won’t-even-tell-you-how-many years and I have never matched her perfection. Nonetheless, we can try! This recipe offers anunusual way to have a low-fat salad dressing that is still tasty!

LOW-FAT VINAIGRETTE
1/4 cup olive oil
1/4 cup vegetable broth
1/4 cup balsamic vinegar
1/4 cup wine vinegar or lemon juice
A clove or two of garlic
1 teaspoon Dijon mustard (optional)(br>
Lots of pepper

Note: Add less vinegar if you prefer a less tart dressing.

Mix all together.
