This dish is very simple but very flavorful, and it’s packed with colorful vegetables that come with a range of health benefits. The creamy beans mixed with the crispy cabbage make a delightful texture.
Black Beans with Veggie Topping
Total cooking time: 2 ½ hours
2 cups black beans, dried
2 tablespoons Earth Balance
1 ½ teaspoons sea salt
1 teaspoon granulated onion
½ teaspoon granulated garlic
½ teaspoon pepper
¼ cup celery, chopped
¼ cup red bell pepper, minced
¼ cup orange bell pepper, minced
¼ cup yellow bell pepper, minced
3 tablespoons parsley, minced
¼ cup green onions, sliced
½ cup purple cabbage, sliced
- Soak beans overnight with enough water to cover two inches above beans.
- Drain beans and add fresh water to 2 inches higher than the beans. Cook on high until beans come to a boil. Add seasonings, except salt and Earth Balance. Lower to medium heat and continue to cook until beans are tender and the broth begins to get creamy (about 2 hours). Keep adding more water as needed, stirring every 15 minutes.
- Chop toppings and mix in a bowl.
- Serve beans in bowl with a spoonful of topping per serving.
