Delightful Black Beans with Veggie Topping

Very simple but very flavorful, this dish adds beautiful color and nice texture to creamy beans.

2 cups black beans, dried
2 tablespoons Earth Balance
1 teaspoons sea salt
1 teaspoon granulated onion
teaspoon granulated garlic
teaspoon pepper

cup celery, chopped
cup red bell pepper, minced
cup orange bell pepper, minced
cup yellow bell pepper, minced
3 tablespoons parsley, minced
cup green onions, sliced
cup purple cabbage, sliced

  • Soak beans overnight with enough water to cover two inches above beans.
  • Drain beans and add fresh water to 2 inches higher than the beans. Cook on high until beans come to a boil. Add seasonings, except salt and Earth Balance. Lower to medium heat and continue to cook until beans are tender and the broth begins to get creamy (about 2 hours). Keep adding more water as needed, stirring every 15 minutes.
  • Chop toppings and mix in a bowl.
  • Serve beans in bowl with a spoonful of topping per serving.

Serves: 4-6

Total cooking time: 2 hours
