Low-Carb Falafel Patties Recipe

If you’re trying to limit your intake of carbohydrates, but you enjoy the taste and crunchy/tender texture of Middle Eastern falafel, this recipe is for you!

These flavorful patties are a good source of protein; garlic, parsley, and spices make them delicious. Get the simple recipe here:

INGREDIENTS

1 12-ounce container firm tofu, drained
1/2 teaspoon sea salt
2 teaspoons ground coriander
1 teaspoon ground cumin
1/4 teaspoon freshly-ground pepper
1/2 teaspoon sweet paprika
Large pinch ground cinnamon
1 garlic clove, very finely minced
1 tablespoon finely chopped fresh parsley
2 tablespoons flaxseed meal
Vegetable oil as needed

1. In a large bowl, mash the tofu with a potato masher or your hands until finely crumbled. Add the salt, coriander, cumin, pepper, paprika, cinnamon, garlic, and parsley. Mix well. Stir in the flaxseed meal until well combined.

2. Shape into 14 oval flattened disks, using a heaping tablespoon of the mixture for each.

3. In a heavy frying pan, heat 1/2 inch oil over medium-high heat. Add the disks and fry until crispy and browned on one side. Turn over and fry on the other side. Remove from pan and place on paper towels to drain.

Serves 3 to 4.
