Mango-Orange Sorbet

Adapted from Fresh Choices, by David Joachim and Rochelle Davis (Rodale Press, 2004).

This sublime tropical treat will cool you off and give you an abundance of vitamins and minerals from the tangy-sweet fruit. Dreamily creamy and frosty, and filled with flavor–and you don’t even need an ice cream maker to do it!

INGREDIENTS
4 cups fresh or frozen mango chunks
1 banana
1/3 cup organic sugar
1/2 cup coconut milk
2 tablespoons grated organic orange zest
Big pinch ground ginger

1. Put the mango, banana, sugar, coconut milk, orange zest, and ginger in a food processor. Process until smooth, stopping to scrape down the sides occasionally, about 2 minutes.

2. Pour in to a shallow metal pan, Cover and freeze until frozen solid, at least 4 hours or overnight. Break the mixture into chunks with a sturdy knife. Process in food processor until soft and snowy but not melted, about 1 minute.

3. Mound into bowls and serve.

Serves 6.
