Ingredients

    For the Massaged Collard Greens Salad
  • 4 cups chopped collard greens, ribs removed
  • 1 teaspoon olive oil
  • 2 tablespoons lime juice
  • 1/8 teaspoon sea salt
  • 1 red apple, chopped into bite-sized pieces
  • 1/4 cup chopped pecans
  • 1/4 cup cup minced green onion
  • For the Ginger-Apple Dressing
  • 2 tablespoons coarsely-chopped ginger
  • 1/4 cup olive oil
  • 1 tablespoon lime juice
  • 1/4 cup low-sodium soy sauce
  • 1 cup chopped apple (about 1 small apple)
  • salt and pepper, to taste

Instructions

    Make the Massaged Collard Greens Salad
  1. In a large bowl, combine the collards, olive oil, lime juice, and salt. With clean hands, massage the collards until they turn a rich, dark brown and begin to wilt.
  2. Toss in the apple, pecans, and green onion, making sure everything gets coated in the oil and lime juice. The lime juice is going to help prevent the apples from browning, so be thorough! Serve topped with the Ginger-Apple Dressing (instructions below).
  3. Make the Ginger-Apple Dressing
  4. Combine all of the dressing ingredients - except the salt and pepper - in your blender. Puree until you get a smooth mixture. Season with salt and pepper.
