Matcha Energy Bites Recipe

Hot†matcha green tea is one of our favorite†pick-me-upsóif you’re a fan, too, you’ll love these flavorful energy bites.†They get their emerald color, earthy flavor, and caffeine content from matcha, natural sugars from dates, and healthy fats and protein from almonds and cashews. The combination is sure to put some pep in your step.

Matcha Energy Bites

Yield:†about 16 bites
Active Time:†

Ingredients:

16†medjool dates, pitted
1/2 cup†raw almonds
1/2 cup†raw cashews
1/4 cup†shredded coconut
1 tablespoon†vanilla extract
2 tablespoons†matcha powder, plus more for serving

Instructions:

Combine all ingredients in the bowl of a food processor fitted with the blade attachment. Pulse to roughly chop, then process until mixture comes together to form a homogenous ball. Roll into tablespoon-sized balls and dust with extra matcha to serve. Store in an airtight container.
