Mediterranean Black-Eyed Pea Salad

This is a colorful and refreshing bean salad, very tasty and perfect for a light dinner or a picnic lunch. The dressing has a Mediterranean flavor and is fun to eat with garlic pita toasts.

1×15 oz. can black-eyed peas, drained and rinsed
12 cherry tomatoes cut in half
¾ cup English cucumbers, peeled and diced small
½ cup yellow bell pepper, chopped
½ cup sweet onion, minced
½ cup parsley, minced
3 tablespoons mint, minced

3 ½ teaspoons apple cider vinegar
1 ½ teaspoons whole grain mustard
2 teaspoons lemon juice
1 teaspoon garlic, minced
½ teaspoon granulated onion
1 teaspoon sea salt
1 teaspoon pepper
¼ teaspoon *ground Sumac (optional)
5 tablespoons olive oil

Garlic Toasts:
2×6 inch pitas, whole wheat or white
3 tablespoons olive oil
1 teaspoon garlic, minced

Lightly whisk dressing ingredients in bowl.
Combine dressing with black-eyed peas and vegetables in bowl and let sit while you make the garlic toasts.
Make pita toasts by separating pitas and then brushing with olive oil and garlic mixture. Cut each circle in 6 triangles. Place on baking pan.
Bake toasts in preheated oven at 400◦ for 5 minutes or until they start to brown on the edges.
