Rana I know how you feel. I moved from Colorado Springs where there are health food stores in competition with each other not to mention Indian markets and a wide variety of restaurants (I also worked at Whole Foods as a sou-chef) to Sterling Colorado were there is two tiny grocery stores and a wal-mart, most restaurants are stake houses and the nearest whole foods is a two hour drive away. Major culture shock! Any way I make my vegan diet work but its a lot more work.....I have to admit there was more than one time where I broke down in tears while trying to shop for my staple foods....there is no tempeh in town!

Eating soy esp. GMO soy not good.
I still contend it is difficult to find enough variety in my area to sustain this sort of diet.
We have cut our meat consumption down by 2/3 in the last 16 months on the South Beach Diet. Rather than consuming 1lb of meat per day per person we now consume about 1lb of meat per day for the whole family. It's not vegan, but it's a sight better than it was.
