New Year’s Pomegranate Champagne Punch
Pomegranate juice and champagne? A mod mimosa–mmmm. Although the vodka in this recipe might tip me over the tipsy cliff–this drink is a fun and festive party punch that serves up a blast of perfect pomegranate antioxidants. Yay! For a less-alcoholic version, omit the vodka; for a non-alcoholic version, combine 2 1/2 cups seltzer and 2 cups pomegranate juice and garnish with lemon twists.
Punch tip: Make ice ahead of time with juice you will be using in the punch–when the cubes melt, the punch will not become diluted.
2 cups champagne
1 cup pomegranate juice
1 cup seltzer
1/2 cup citrus vodka
Lemon twists for garnish
Combine champagne, pomegranate juice, seltzer and vodka in a large bowl or pitcher. Serve over ice with a twist of lemon.
6 servings, 3/4 cup each.
