Peace Cookies Recipe

The oats in these tasty little cookies actually nourish our nerves, which can lead to a more peaceful frame of mind and body. The cookies are also bursting with iron-rich raisins and molasses, and walnuts for added protein and omega-3 oils. They even help lower cholesterol! But your kids don’t need to know how healthy these cookies are–they’ll just love the great taste.

These are such an inexpensive and nutritious treat. And feel free to make a little peace sign on each cookie with a toothpick before baking, if you are so inclined. After all, nourishing and healing are two lovely first steps toward peace.

INGREDIENTS

1/2 cup butter (1 stick)
1/2 cup honey
1 tablespoon molasses
1 1/2 cups whole wheat pastry flour
1 3/4 cups oats
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 cup milk
2 tablespoons yogurt
1/2 cup raisins
1/2 cup walnuts, chopped

1. Preheat oven to 350F. While the oven heats, place butter, honey, and molasses in a heatproof bowl and put this in the oven until melted.

2. Combine dry ingredients, then add butter mixture, milk, and yogurt. Stir well to combine.

3. Butter a cookie sheet. Place tablespoons of cookie mixture on sheet, spacing about 2 inches apart. Bake 12 to 14 minutes, until lightly browned.

Makes about 4 dozen.
