Peachy Yogurt Ice Recipe

Fresh, juicy peaches make this refreshing desert a favorite with everyone: it‘s a real taste of summer. You don’t need an ice-cream maker to make it, and it uses maple syrup rather than sugar, and yogurt rather than cream, so you can feel good about serving it to those you love.

INGREDIENTS

4 cups sliced ripe peaches
1/4 cup maple syrup
1 cup low-fat vanilla yogurt
1 tablespoon lime juice

1. Freeze peaches in a single layer overnight.

2. Remove peaches from freezer and thaw slightly (about 5 minutes) and process in a food processor with maple syrup, yogurt, and lime juice.

3. Serve immediately, or freeze in a shallow pan 6 hours or overnight. When ready to serve, break the frozen peachy ice into chunks and process in food processor until creamy and smooth.

Serves 8.
