Power-Packed Carrot & Red Pepper Drink

Nothing quite kickstarts the mind and energizes the body on a summer day better than a chilled, delicious drink.

And if the drink is packed with the power of antioxidants, minerals and essential vitamins, you have an absolute winner.

I tried a carrot-red pepper slush at home, with wonderful results. †Spiked with tomatoes, it not only filled me up but sent ripples of fresh energy coursing through my body. The reason was easy to identify: every single ingredient in the drink contains concentrated amounts of beta-carotene, Vitamins A and C, and important trace minerals that boost overall health.

It is a superb slush for every reasonógood for you, low in calories, and quick to make. Do use preservative-free juice for best results.

Here is the recipe (serves 2):

2 glasses of carrot juice

2 glasses of tomato juice

2 large red peppers, deseeded and roughly chopped

1 tbsp lemon juice

Freshly crushed black pepper

1 cup crushed ice

Process the tomato and carrot juices together in a food processor, with half the ice.

Add the rest of the ingredients and process until the ice is blended nicely into the drink.

Pour out into two tall glasses.

Enjoy chilled.

You can play with this recipe as you like, adding spices such as vanilla or cinnamon, replacing the peppers with coconut water, perhaps. The ideas are infinite, and as long as you combine health-giving fruits and veggies, the health rewards are sure to be rich!
