Real pumpkin and coconut milk are the base for this healthy pumpkin spice overnight oatmeal. It’s sweetened with whole fruit and is adelicious breakfast for fall or anytime youcrave a little pumpkin spice pick-me-up.You puree the pumpkin spice base ingredients right in you blender, then stir in rolled oats. Refrigerate overnight, and in the morning you are ready to eat!

You can enjoy yourPumpkin Spice Overnight Oatmealcold or warm it up. I heat mine in the microwave, usually, but if you don’t do microwaves, you can transfer to a pan and warm on medium heat, stirring, for a few minutes. Adda couple of tablespoons of water, if it starts to get too thick on the stovetop.

Ingredients

    For the Pumpkin Spice Base
  • 1/2 cup pumpkin puree
  • 1/2 cup coconut milk (The kind for cooking that comes in a can, not the boxed one.)
  • 1/2 cup vegan milk
  • 1 ripe banana
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 2 dashes of cloves
  • 2 dashes of nutmeg
  • For the Pumpkin Spice Overnight Oatmeal
  • 1 cup rolled oats

Instructions

  1. In your blender, combine the pumpkin, coconut milk, vegan milk, banana, and spices. Puree until completely smooth.
  2. Pour the rolled oats into a pint jar or divide between two half-pint jars, if you want to make single servings. Add the Pumpkin Spice Base, and stir to combine well.
  3. Refrigerate overnight, then serve.

I enjoy oatmeal for breakfast every morning and always add a pinch of cloves and nutmeg, also cinnamon. Ground flax is added after cooking and I finish off by adding greek yoghurt. Yours sounds a little bit healthier though.
