Quinoa Cakes

Quinoa Cakes

These cakes are delicious and not hard to make. They’re good plain or with the pesto sauce on top (see sauce recipe at bottom).  Adding avocados, or salsa, is tasty, too!

4 eggs, well beaten
½ cup onions, diced
½ cup red bell pepper, tiny dice
2 cups quinoa, pre-cooked
½ cup cheddar cheese, shredded, sharp white or orange
¼ cup parmesan, fresh, shredded
½ teaspoon granulated garlic
½ teaspoon granulated onion
½ teaspoon chili powder
1 ¼ teaspoon sea salt
Dash pepper
¼ cup bread crumbs
1/3 cup olive oil

  • Mix all ingredients thoroughly in bowl.
  • In frying pan, heat oil to medium heat.
  • Spoon quinoa mixture into pan in small patty amounts.
  • Cook until brown on edges – about 5 minutes.
  • Make sauce and serve on the side.

Creamy Pesto Sauce:

2/3 cup    sour cream, low fat or regular
4 tablespoons pesto sauce
¼ teaspoon sea salt
½ teaspoon lemon juice
1 tablespoon water
½ teaspoon minced garlic
1/3 cup olive oil

Whisk ingredients well in bowl, and serve on side.

Serves: 6

Total cooking time: 45 minutes

These were fantastic! Thank you for sharing the recipe. Yes, would be fine without the sauce, but the sauce is great. I ended up with a bit more sauce than I needed, but I'll use on something else as it tastes great. Recipe did not say to turn the cakes, but I decided they needed a little cooking on the other side, but be careful not to turn too soon or they might fall apart. I served with an arugula salad and this made a great meal. A keeper for me.

Right to my favorites! Unfortunately, quinoa is pricy. I don't have COSCO card, so I have to buy it in regular markets. If anyone have a tip about where we can by it in bulk, would be very helpful. Thanks!!

We had these for dinner last night & all enjoyed! Quinoa is such a versatile grain & a great meat replacement. Costco has a 4lb. bag that's organic at a really good price! Here's to eating healthy everyone!
