Raspberry Almond Fruit Crisp

Inspired by Going Wild in the Kitchen, by Leslie Cerier (Square One, 2005).
Berries are one of the most delicious ways we know of to get our daily dose of antioxidants, and this mouthwatering naturally-sweetened berry recipe includes healthy nuts and is wheat-free, too!
INGREDIENTS
1 1/2 cups fresh or frozen raspberries
1 1/2 cup sliced pears
1 cup sliced apples
1/2 cup fresh or frozen blueberries
1 cup peach juice or apple cider
Topping
3/4 cup almonds
2 cups rolled oats
1/4 cup walnuts, coarsely chopped
1/4 cup cashews, coarsely chopped
1/2 teaspoon sea salt
1/2 cup maple syrup
1/4 cup canola oil
1. Preheat oven to 375F.
2. Place almonds in a food processor and grind until it forms a meal. Place almond meal in a mixing bowl along with the oats, walnuts, cashews, and salt and mix thoroughly. Add maple syrup and oil and stir again until well combined.
3. Arrange fruit in the bottom of a 2-quart baking dish. Cover with the topping, pour peach juice or cider on top, and bake until fruit is bubbly and topping is crisp and golden-brown, about 30 minutes. Serve warm.
Serves 4 to 6.

add your comment »In Scandinavia, glutenintolerants are recomended to eat oat. New studies says that oat does not contain the same gliadin protein as wheat, rye and barley. But if you do not dare to try oat, why not try millet?

I think roasted buckwheat groats might be a good substitute. Or maybe crushed gluten-free cereal?

Have you visited Natural Food stores for gluen-free products? like Trader Joes or Henry's markets? OR maybe even Nutrition Marts? just suggesting...good luck!!!

OMG! This sounds so delicious; however I will need to substitute somthing for the rolled oats to make it completely gluen-free. Any suggestions?
