Raspberry Gratin (Recipe)


This will last for a few days in the fridge — if it can last that long! Serve this with vanilla ice cream for extra decadence.

Rasberry Gratin.


  • 2 Cups crème fraîche
  • 1/2 Teaspoon vanilla (or to taste)
  • 2 Cups fresh raspberries
  • 1 Cup dark brown sugar

1. Place oven rack in second highest slot. Preheat broiler.
2. Add vanilla to crème fraîche in container and stir to combine. Transfer to a shallow 1-quart dish, add berries, and fold into crème fraîche. Top the mixture with brown sugar in an even layer over mixture by pressing it through a sieve. Transfer to oven and broil for up to 2-6 minutes, until the brown sugar starts to caramelize. Watch closely — the sugar can go from caramelized to burnt very quickly.
