Refreshing and Cleansing Radish Salad

Inspired by The Great American Detox Diet, by Alex Jamieson (Rodale Press, 2005).

This cookbook author’s filmmaker fiance (of Supersize Me fame) suffered terrible ill effects from eating fast food for a month, so she devised this and other recipes to detoxify his system and bring him back to fitness.

Even if you are already in the pink of health, you will feel the goodness of this crunchy, tasty salad. There is more to it than radishes: Apples, carrot and citrus all add to the lively flavors and health benefits. Read the refreshing recipe here.

INGREDIENTS

2 cups peeled and thinly sliced daikon radishes
1 cup thinly sliced green apple, sliced into half-moons
1/3 cup grated carrot
1/4 cup thinly sliced red onion, sliced into half-moons
1 red radish, grated
1/4 cup freshly-squeezed orange juice
2 teaspoons brown rice syrup or maple syrup
1 teaspoon freshly squeezed lime juice
1 teaspoon sea salt
10 leaves fresh mint and cilantro (optional)

1. Combine daikon, apple, carrot, onion, and red radish in a large mixing bowl.

2. In a small mixing bowl, whisk together the orange juice, rice syrup, lime juice, and salt.

3. Pour the liquid over the vegetables and toss well to combine. Garnish with mint and cilantro, if desired, and serve.

Serves 4 to 6.

This salad is delicious! The only item that I left out was the raw onion because of personal preference. Definitely add the mint- it makes it very refreshing. I would decrease the salt a bit next time too.

Doretta, when I lived in BC and had dealings with oriental people for many years. The believe(hundreds of yrs.) that Diakon or Lobok is an excellent kidney cleanser, and ldoes not have the same oxalic acid as radishes which rob you of vitamin C.

Are daikon radishes the long white radishes? If so, I haven't seen them in years. Would it make much difference if I just used regular radishes? It still sounds good to me.

@Doretta A daikon radish is a very big, mild white Asian radish that has a shape like a squat carrot.

This salad just sounds good! I'm gonna head down to the market and grab a couple of things... :)

This was so easy to make, and it made for a nice before-dinner snack. I would choose to cut the salt down and increase the apples the next time around though. But it may depend on how strong the daikon radishes are though (mine were pretty strong).
