Simple Strawberry Cream Freeze

Inspired by Simple Food for the Good Life, by Helen Nearing (Chelsea Green, 1999).

This luscious recipe inspired by simple-living expert Helen Nearing takes strawberries to new levels of pleasure: you don’t need an ice-cream maker to concoct this tangy-sweet and creamy frozen strawberry dessert.

INGREDIENTS

1 quart strawberries (you could also substitute blueberries or raspberries)
1/2 cup maple syrup
2 cups plain Greek-style yogurt
1 cup organic sour cream

1. Mash berries and combine with maple syrup. Fold in the yogurt and sour cream.

2. Place mixture in a shallow pan and put in freezer. Stir every half-hour for 2 hours, then serve.

Serves 6 to 8.

I am so making this for my children. I may attempt a small batch with a lower fat variety sour-cream, and maybe, just maybe substitute the syrup with agave nectar that I just bought.

Mine is still freezing but the bits I have tasted are amazing! I love knowing EXACTLY what is going into my ice-cream/frozen yoghurt. I also made one with mixed frozen berries and chocolate chunks, yum :) The possibilities are endless!

Greek yogurt or any such sort may be acquired at home by buying any yogurt and placing it on a few paper towels in a strainer for several hours in the fridge so that the liquid is removed and the yogurt is solid. It can then be served with honey or topping of your choice or used in the recipe above.

Sara G, I use glass in the freezer all the time, just don't heat it up in anyway right after you take it out (i.e. don't pour in warm or hot water, or place the dish in hot or warm water.) Glass will be more likely to crack when one side is hot and the other is cold. So don't heat it up or cool it down too fast or it will crack.

Another good greek yogurt (available in most supermarkets) and cheaper than Fage, is Chobani (not sure of spelling) but it is delish.

Okay this might be the silliest question on here, but can I use a glass pan? I putting glass in the freezer can be dangerous, but I was thinking it might be safe as long as it was not sealed or under pressure, like glass soda bottles. I'd rather use glass than aluminum.
