My favorite summer fruit meets my favorite autumn fruit in this wholesome treat. Iím lucky enough to live in Californiaís central valley, where I can get both at the same time. Locally-grown and fresh as can be.

Feel free to adjust the amount of sugar used.

  • 3 1/2 lbs. of apples (about 12 medium,) peeled, cored and chopped
  • 1/2 C. water
  • 1/3 C. sugar
  • 1 pint strawberries, rinsed and hulled
  • 1 t. vanilla extract

  • Add chopped apple, water and sugar to large stockpot. Bring to a simmer. Simmer 25 minutes, or until apples are soft, stirring often and checking for sticking. If apples begin to stick to the bottom of the pot, add a large splash more of water. Once soft, turn off heat.
  • Add strawberries and vanilla extract. Using an immersion blender, blend apple-strawberry mixture until smooth. (If you don’t have an immersion blender, transfer to an upright blender or food processor.) Enjoy warm or chilled.
