Summer Recipes for August’s In-Season Fruits & Vegetables

It’s last call on summer produce! As August begins we see a lot of the year’s best fruits and vegetables ripe for the picking. We’re just a few weeks away from the unofficial end of summer, so sink your teeth in to a juicy watermelon, tomato, or even ear of corn while you can!

One has to wonder how the record-setting heat wave and drought across many of the country’s strongest agriculture areas will affect availability, price, and even flavor of some of this year’s produce. This is a time when sourcing local will be even more necessary so that you’re sure to support those farmers whose crops are in dire need of mother nature’s TLC.

Stop by your farmer’s market, expect some extra delicious selections in your CSA box this month, or just spend a little time shopping the grocery produce section because the August in-season fruits and vegetables are going to make you want to stretch your culinary muscles.

Fruits: Peaches, nectarines, watermelon, plums, apricots, mangoes, avocados

Vegetables: Tomatoes, zucchini, salad greens, corn (technically a grain!), bell peppers, carrots, okra

Most of these are delicious as-is, no fuss or muss. But many of them are wonderful when grilled or paired with complementary flavors. Prepare these in-season fruits and vegetables with a little help from the following recipes:

Toasted Quinoa, Chicken, Corn and Avocado Salad

Watermelon Agua Fresca

Grilled Mangoes, Pineapple, Peaches

Dark Chocolate Zucchini Cake

Grilled Prawn Salad with Tomatoes and Avocado Aioli

Three Pepper Pasta Recipe

Peach Yogurt Pops


  • 1 1/2 cups sliced fresh peaches
  • 1 cup low-fat or fat-free plain yogurt
  • 1/4 cup liquid honey


  • Combine peaches and yogurt in blender
  • Begin to process
  • While processing, add in a slow stream of honey
  • Process until smooth
  • Pour into popsicle molds
  • Insert Popsicle sticks
  • Freeze until firm
