Tart Red Cherry Sauce

Adapted from Fruit-Sweet and Sugar-Free, by Janice Feuer.

Frozen tart red cherries need to be infused in this sauce for at least 24 hours to develop their incomparably delicious and unique tartness.

INGREDIENTS
1/4 orange, peel and juice
2 1/2 tablespoons fruit sweetener
1/2 teaspoon cinnamon
2 cups frozen tart red cherries
1 1/2 teaspoons arrowroot
1 tablespoon cold water
1/4 teaspoon vanilla extract

Use a veggetable peeler to remove long strips of peel from a quarter of an orange. measure the juice squeezed from one quarter of an orange, and add enough wter to make 3 tablespoons liquid altogether. Place the juice and water, sweetener, cinnamon, and orange peel in a medium saucepan, and bring to a boil.

Stir in the cherries and return the mixture to a boil. In a cup, dissolve the arrowroot in the cold water and stir it into the pot. As soon as the sauce thickens remove the pan from the heat and stir in the vaniilla.

Refrigerate the sauce for 24 hours to develop its rich cherry flavor.
