It’s hard not to be reminded that summer is coming to an end. But it’s not over yet — melon season is still in full swing! Embrace these last few weeks with this refreshing melon salad. Perfect for a barbecue, dessert, or even a quick breakfast pick-me-up!
Three Melon Salad.
1/2 Cantaloupe, halved and seeds removed
1/2 Honeydew, halved and seeds removed
1/2 Mexican Watermelon, halved
1/4 Cup loosely packed mint leaves, torn
Juice of 1 lime
1. Slice melons into 1/2 inch pieces. Cube the pieces, and cut away any rinds while you’re at it. Transfer cubed melon to a large salad bowl. Top with mint leaves and lime juice and toss to combine.
