Tomato Relish Salad with Fresh Herbs Recipe

Adapted from Vegetarian Celebrations by Nava Atlas (Little, Brown and Company, 1996).

This time of year, almost everyone we know is inundated with the most gorgeous ripe tomatoes. Here is a simple-to-make and slightly unusual way to serve them, redolent with fresh herbs and just a bit of honey to bring out the bright sweetness of those luscious globes of summer pleasure.

INGREDIENTS
1 pound ripe yellow tomatoes
1 pound ripe red tomatoes
1/4 to 1/2 cup minced red onion, to taste
3 tablespoons chopped oregano leaves
2 teaspoons French thyme or lemon thyme leaves
1 tablespoon olive oil
2 tablespoons red wine vinegar
1 1/2 teaspoons honey
Salt and freshly-ground black pepper, to taste

1. Cut the tomatoes into dice no larger than 1/2 inch. Combine in a serving bowl with onions and herbs.

2. In a small bowl, mix the oil, vinegar, and honey. Pour over the tomatoes and toss together.

3. Cover and refrigerate for an hour. Before serving, season to taste, if desired, with salt and pepper.

Serves 6.
