Veggie Popsicles Kids Will Love!

We are big on green smoothies in our house. We usually make them once or twice a day at least and I load them full of healthy, leafy greens and veggies. So even if my kids don’t want to finish the veggies on their plate at dinner I do not worry because they already have two to three servings in their bodies already thanks to green smoothies. But since we are trying to get away from eating meat for environmental and health reasons, I find the need to get even more protein rich greens into their diet every day. With summer around the corner it seemed a no-brainer to accomplish this with delicious warm-weather treats. Our green smoothies become green Popsicles in just a few hours!
The principle is the same, just mix leafy greens and veggies with fruit in a blender and pour the mixture into popsicle molds. For added sweetness you can use a bit of raw agave nectar but a ripe banana is usually sufficient. My kids love these so much they go through a dozen every two days so obviously they are pretty darn tasty. The fact that they are healthy too is a big bonus.
Because so many plastics have nasty ingredients that can leach, I also make sure to use BPA Free Popsicle molds. We like the stars and rockets Tovolo popsicle molds.
Here is an easy green Popsicle recipe that my kids love. I am sure yours will too.
Electric Green Popsicles (pictured above)
Ingredients:
• 3 ripe bananas
• 1 medium pineapple
• 2 cups spinach
• Water
Blend until smooth and pour into molds.

I like your green smoothie we have one Called the green monster almost the same as yours.. one orange, one banana, one fresh pineapple spear, a handful or two of fresh spinach, one cup of ice 2 or three cups of water and one measure of "Kal" Pure Stevia.
Then we also have a RED MONSTER drink that we all love . Kids love this one. One pineapple spear, one apple, three carrots, three celery stalks, One beet pealed and topped. One measure of " KAL" pure stevia and of course water and ice as in the Green Monster drink above.

I use Silken tofu blended with frozen fruit and the texture is amazing! I made it for my baby and now I want to make for the grown ups. I have to say it is not a smoothie, it has a creamy consistency like smooth ice cream and tastes really well.

For the last couple of years, I have been making "green" smoothies but they are more purple...we use: 1/4 cup cooked organic frozen spinach (to make the spinach texture smoother), half a cup each of organic frozen mangoes, organic frozen strawberries and 1/4 cup organic frozen blueberries with 1/4 c vanilla nonfat yogurt, 1/4 cup plain nonfat yogurt and an organic banana. If you need more liquid, add some orange or apple juice. If you have it, you can add a spoonful of soy protein powder, which I usually do. My five year old son loves them, and I get to have a treat, too! No, maybe it isn't perfect local food, but when you have a picky eater, sometimes it is the best you can do. We all do what we can, and we all have different ideals to uphold, some of which are harder than others!

sounds tasty, and not just for little kids, though I can think of a dozen + variations I would like to share, some make them greener, others make them greener
1. use more spinach
2. use greens other than spinach that kids are less willing to eat straight
3. add a spoonful of spirulina or other blue-green algae
4. add a shot of wheat grass juice
5. yogurt instead of some/all the banana, could be nondairy yogurt
6. alfalfa or other sprouts
7. stevia, mint, cinnamon, anise, or other herbs/spices
8. peas or other legumes
9. (green) grapes
10. apples, peaches, pears, nectarines, or any other local fruit instead of pineapple, unless pineapple is local for you
11. add berries (anything local) though it will no longer be green, could chop coarsely, possible prefrozen, and add at the end so they are like spots
12. honey if you need to sweeten rather than agave, again unless agave is local for you
13. celery or bell peppers, in moderation
14. try just blending the fruit and see, you might not need liquid, if you do, don't use water, use whole fruit juice or milk, could be nondairy milk

Your veggie pops sound like a fun summertime way for kids and adults to get more greens. However, I am a little disappointed that the meat=environmental destruction argument is being promoted here.
I understand that industrial farming methods are incredibly destructive to the environment- whether producing animal or plant based foods but, in many places in the U.S., if you look hard enough, you can find local farmers who raise animals in such a manner as to actually benefit the land. Plus, local foods have a far smaller carbon footprint than, say, pineapples and bananas from thousands of miles away. Unless, of course, you live in the tropics. Do you know your banana farmer?

Please visit your local Asian supermarket. They have veggie and bean pops that are DELICIOUS! And they've been making them for hundreds of years. And they are super cheap.

Much better than feeding your kids sugar and food dyes, they dyes are horrible for your children. so ya, this is much better for your kids! we are going to all natural. {ya know them freaky people ya always hear about **huge smile** } its amazing when you "sneak" in the vege's that kids won't eat, how much they eat, mine won't knowingly eat collards, but if i put them in a blender,, sneak it in something like a side dish, ohhh ya they will, **grin** we can be the bomb and not even know it!! **big smile**
