Watermelon and Cucumber Salad

YIELD 2 servings

Ingredients

1/2 pound watermelon, cut into chunks
2 cucumbers, seeded and chopped
8 fresh mint leaves, torn
2 tablespoons fresh lime juice
1 pinch salt
1 pinch pepper

Instructions

1. Mix all ingredients in a large bowl and serve immediately.
