As usual, time is money so slowing down in speed will cost money. A better idea would be is to install propellor guards which would not only save whales but a host of marine life if installed or rather mandatory on all vessels regardless of size vessell. A guard would be a one-time cost whereas loss of speed would add up time and time over again. Whales, manatees, seals, dolphins and even sharks all in their respective habitats would be very grateful if they did.

I live along the Bay Of Fundy where the North Atlantic Right Whale spends its summer, they are a magnificent animal that need every protection we can offer them. Several years ago it was determined that ship strikes killed a high number of Right Whales every year so the local business ( Irving Oil ), that owns most of the ships agreed to change the shipping lanes, moving them closer to Nove Scotia and away from the whales, the result has been no deaths from ship strikes in the years following. Yes, the speed the ships take needs to remain slow, but the whales are still dying from entanglement in fishing gear. This is what we need to focus on now, how can we protect this incredible animal from fishing gear ?

Baked Apple Nut Fudge

Recipe type: Dessert
Author: Chocolatier
Serves: 24 Pieces

Making fudge is not as difficult as one might think.


Ingredients
◦1 C flour
◦1/2 t baking powder
◦1/4 t baking soda
◦1/4 t salt
◦1/2 C butter
◦2 oz. unsweetened baking chocolate.
◦1 C sugar
◦2/3 C applesauce
◦2 eggs
◦1 t vanilla
◦1/2 C nuts, chopped


Instructions

1.Sift the flour into a large mixing bowl.
2.Add the baking powder, soda and salt to the sifter and sift into the flour.
3.Place the butter into a double boiler.
4.Add the chocolate and place the double boiler over medium heat.
5.Cook until the chocolate and butter have melted together stirring occasionally.
6.Remove the pan from the heat.
7.Add the sugar and stir until all of the sugar has dissolved.
8.Fold the applesauce into the mixture thoroughly.
9.Add the eggs one at a time being sure to mix well after each addition.
10.Mix in the vanilla and continue mixing until all the ingredients have been incorporated together well.
11.Slowly add the flour mixture to the chocolate mixture being sure to mix well as you add.
12.Gently fold in the nuts.
13.Place the oven temperature at 350 degrees and allow the oven to preheat.
14.Butter the bottom and sides of a square baking pan well. Spread the mixture into the prepared pan being sure it is even.
15.Bake 35 minutes or until firm.
16.Allow the fudge to cool before cutting into bite size squares.
