When it comes to pasta, Americans look to Italy for approbation, but cold noodles are not particularly popular there. Food corporations like Kraft churn out pasta-salad mixes that seem to be marketing gambits for processed meat brands.

At first, I'd have said it was the "California" in me that made me love cold pasta salad. But, in actuality, I think it started with my mother's macaroni salad. (Yummmmmmmmm, green peppers, scallions, sweet mustard/mayonnaise sauce.)

A "pasta freak" likes it cold, hot, lukewarm . . . mayonnaise, clam sauce, vinagrette.

I disagree with a lot of what was written on that web page. I use elbow macaroni. I do add a little bit of mayonnaise to it and a lot of uncooked broccoli crowns (cut up into small pieces). When I put the serving into a salad dish and it is about to be eaten, I add a few tablespoons of apple cider vinegar over it. It is delicious!
