My concern would be with food safety - leaving the food in a "hotbox" for three or four hours or more. It's not like there would be a heat source keeping the food at a safe temperature, such as in a crockpot or other slow cooker appliance. Otherwise, it seems like an interesting idea.

I really don't think there should be a concern about "food safety"... the food should be warm enough if the box is well-insulated. (It takes a pretty long while for food to actually go bad even sitting at room temperature, so this is plenty safe enough.)
