In our family fruits, vegetables and whole grains are something kids love and I think the reason they have been vegetarian by choice is they not only help plant their favorite vegetables in the garden, but they help prepare meals. This means they also choose what to make for dinner and they then choose the foods and prepare them. And teaching a child around age four onward to cook by having a lower work area and rather than using a knife a four year old can do the mixing with their hands and leave the cutting to older kids or adult. They even have cutting scissors for small children.
