Thanks Adrian. I like it baked with a little black pepper on it. If you
eat meat,you can brown some ground round with a little Italian sweet
sausage and make a thick mixture with a little tomato sauce. Place that
inside the eggplant that has been split length wise and top with some
shredded cheese.Bake 350* til eggplant is tender. My Mom use to cube
the eggplant and place it into a prepared meat mixture with small cubes
of cheese and Italian bread crumbs on top and baked the casserole at 350*
until eggplant was tender.That was the only way my Dad cared to eat it.
This also tasted good cold the next day. Was a good dish to have in the
oven until the men came in from getting the hay put in the barn. Yummy.
