This is great, we are learning what our grandparents knew when fruits and vegies were seasonal and certainly did not come on a truck, ship, plane or train.

In the 70's and 80's I canned all the time. I stopped when I started working all the time. Last year I restarted canning, freezing and dehydrating the vegetables I grew in my yard. This year has been bad for gardening, so it looks like the local farmers market for this years produce.

I have heard the typical gossip that you really don't save much money by home canning (government under Reagan in the 80's said you didn't save money, then they started the botulism scare trying to discourage those who home canned) but I know what is in the jars I pack and no unnecessary chemicals and preservatives and whatever else that big agriculture adds to the store bought canned foods. I feel more at ease that my home canned foods are safer that what you may buy at a store. Just look at the recalls, the exposure of the filth and unsanitary conditions in the factories that process food for the public, tampering, lack of proper inspections and other things we hear about, makes you not want to eat anything youi have no control over.

Sure it is a lot of work, but at least it's safe. Happy canning.

I invested in a Pressure Canner/Cooker this year...Purchased from Amazon.com....Already have peaches-cheeries-potatoes-and going to do apples.Blanch and freeze corn.....Froze some squash-need more....Have already done twice what I did last year....Sure was GOOD to bring it up when WINTER WINDS HOWLED....We NEED TO BE MORE SELF SUFFICIENT....We depend WAY TO MUCH on "others" to care for our needs....
