Passover, the celebration of the Exodus, marks the Israelites' liberation from slavery. According to the Bilical Book of Exodus, this event gave birth to the Jewish nation. The 7-day holiday is symbolized by an unleavened bread called "matzo," which commemorates the unleavened bread consumed by the early Jews as they fled Egypt; the story holds that the Isrealites were in such a rush to leave that they did not wait for their bread to rise before baking.
