Delightful Wild Rice Salad

This wild rice salad is delicious, nourishing and filling. It has savory vegetables in it to give the wild rice a good contrast.

Ingredients:

1 cup cooked Wild Rice
Red Beet,
cooked
1/4 Red Pepper
2 Celery sticks
1 small Red Onion
Fresh mint leaves

Directions:

  1. Chop pepper, beet, celery and red onion.
  2. Mix all vegetables and mint leaves together with rice.
  3. Pour on creamy tahini salad dressing.
  4. Mix and serve.

Gluten-free Zucchini Pasta Spaghetti with No-Meat Balls made with Wild Rice

Gluten-free Zucchini Pasta with No-Meat Balls made with Wild Rice

Ingredients:

1/3 cup Wild Rice (1 cup cooked)
1 carrot, chopped fine
1 small onion, chopped fine
3/4 cups chopped mushrooms, chopped
3 cloves of garlic
1/2 cup walnuts
1/3 cup fresh parsley
1/2 teaspoon cayenne pepper
1 teaspoon dried thyme
1-2 teaspoons fine sea salt
1/2 – 1 teaspoon fresh cracked black pepper
grape seed oil for cooking
Olive oil
about 1/3 cup chickpea flour for coating
additional ingredients :
1/2 package gluten-free rice pasta
3 medium sized zucchinis
Tomato sauce
You will also need: food processor, 1 large pot for boiling pasta, 1 large cast iron pan for cooking the balls, julienned peeler or spiralizer for the zucchini.

Directions:

  1. First, set the Wild Rice to a boil as per directions.
  2. Set a large pot to boil the gluten-free spaghetti pasta as per directions. Once cooked, strain in a colander and drizzle with olive oil and mix well. Cover in the pot to keep warm
  3. Wash the vegetables and cut.
  4. In a large saucepan, sauté the onion and carrots until they start to soften, add mushrooms and garlic and cook for about 5 minutes. Set aside to cool.
  5. In a food processor, combine all the other ingredients, including the cooled cooked wild rice, vegetables and seasoning. Process to make a crumbly mixture. Turn off the mixer half way through and scrape down the sides to get all the ingredients evenly processed. Taste a little of the mixture at this point and adjust the seasoning to your liking. Remove from the food processor into a bowl so it’s easier to scoop from, or just remove the blade and get ready to make some balls!
  6. On a large plate, spread out some chickpea flour. Scoop some of the dough, about a golf ball size, onto the palm of your hand and roll to make a ball. Then roll in the chickpea flour and dust off some of the extra flour that may stick on.
  7. Heat a large cast iron pan on medium heat with grape seed oil. Cook the no-meat balls rolling them around every minute or so. Don’t roll too soon as the balls might stick to the pan if they’re not cooked on that side yet. You’re looking for a little golden color before you roll them to another side.
  8. As they are cooking, use the spiralizer or julienned peeler to cut the zucchini into noodles.
  9. Just before serving, toss the zucchini noodles with the gluten-free pasta on serving plates. Add homemade tomato sauce, and then top with the Wild Rice No-Meat Balls. Finish with a sprinkle of fresh herbs such as thyme or basil. Serve and enjoy!

Wild Rice Mushroom Risotto

Wild Rice Mushroom Risotto

This is a delicious wild rice risotto and very simple to make.

Ingredients:  

2 cups mushrooms, sliced
2 tablespoons coconut oil
1 medium onion, chopped
1 handful spinach leaves, washed
1 cup frozen or fresh corn kernels
2 cups cooked wild rice
1 tsp Spike
Black pepper to taste

Directions:

  1. Cook rice in a covered saucepan. (see recipe for rice cooking)
  2. In a large frying pan, heat oil over medium heat.
  3. Sauté mushrooms and onions stirring often, till lightly golden.
  4. Add corn, cook, stirring often, for two minutes.
  5. Now add spinach cook, stirring often, for about two minutes.
  6. Add the cooked rice to this mixture, stirring in.
  7. Season with a sprinkle of Spike and black pepper.

Deluxe Wild Rice Pudding

Deluxe Wild Rice Pudding

This wild rice pudding is a new favorite pudding of mine. It has a creamy consistency but is still vegan. It is not overly sweet and yet has lots of flavor and wild rice, of course.

Ingredients:

3 cups cooked wild rice
1 1/2 cups coconut milk (rice, almond, or oat is fine too)
1 Tbsp arrowroot + 1/2 cup coconut milk
1 tsp. vanilla extract
2 Tbsp maple syrup (optional)
1/2 tsp stevia
1 tsp cinnamon
1/4 teaspoon salt
1/2 teaspoon ginger
3/4 cup sultana raisins
1/2 cup unsweetened coconut
1/2 cup pecans, lightly chopped

Directions:

  1. Cook rice.
  2. Combine arrowroot with 1/2 cup coconut milk.
  3. Mix cooked rice into a baking dish with all ingredients except for pecans.
  4. Sprinkle pecans on top.
  5. Bake at 350ş for 30 – 40 minutes.
  6. Remove from oven and let sit for 10 minutes to cool down.
  7. Serve and enjoy this deluxe wild rice pudding.
