Easy Vegan Chickpea Salad Sandwich

Packed lunches are easy with a container of homemade Chickpea Salad in the fridge. This recipe makes enough for three chickpea salad sandwiches – that’s a lot of lunches sorted!

Think of chickpea salad as the vegan equivalent of chicken salad that does NOT taste like chicken salad.

What it does is workdeliciously anywhere that you’d want chicken salad, like scooped over a heap of greens or piled onto whole grain bread in a sandwich.

This vegan chickpea saladsandwich isa lovely mix of savory ingredients with a hint of sweet from sliced grapes. Ilove using red grapes in this recipe, for a pop of color, but green will work just as well. If youthink grapes and chickpeas togetherdoesn’t sound like your cup of tea, feel free to leave them out.

Ingredients

  • 2 cups cooked chickpeas, drained (or 1 15-ounce can)
  • 1/4 cup vegan mayonnaise
  • 1/4 cup minced celery
  • 1/4 cup minced onion
  • 1/3 cup diced seedless grapes (red or green is fine, think pea-sized pieces when dicing) - optional
  • 1/4 toasted sunflower seeds
  • salt and black pepper, to taste
  • 6 slices whole grain bread

Instructions

  1. In a medium sized bowl, mash chickpeas together with the mayo. Big lumps are fine. You're going for a smashed potatoes texture, not a totally smooth situation.
  2. Fold in the remaining ingredients everything else, except the bread.
  3. Pile the chickpea salad into a sandwich, and eat. The salad will keep for 3-4 days in the refrigerator.

Thanks for sharing... if would like to go for more of a vegan un-tuna... similar recipe: one can organic chick peas (right out of can, drain most liquid, mashed up with a fork to semi smooth/chunky), add chopped celery, a little chopped onion, vegenaise (vegan mayo) and the "secret ingredient" ...celery salt too taste. Serve on some toasted bread - maybe with tomato slice, avocado, lettuce... : )
