Farfalle Pasta in Creamy Garlic Sauce (Yes, it’s vegan!)

We don’t think of pasta when we think about healthy eating, but pasta gets an undeserved bad rep. In fact, eating pasta can actually bevery healthy, as long as you’re not drowning it in butter, cheese and meat.

This deliciousFarfalle Pasta in Creamy Garlic Sauce is surprisingly healthy for how rich and decadent it tastes. The peas give ita healthy dose of protein and fiber. Thecreamy sauce is adapted from my Garlic Cashew Cream sauce, and it’s sneakily protein-packed from the cashews.

Ingredients

  • 1 1/2 cups frozen peas, thawed
  • 2 cups dry farfalle pasta, cooked according to package instructions
  • 1 cup raw cashews, soaked in hot water for 10 minutes
  • 1/2 cup water
  • 3 cloves garlic
  • juice of 1/2 lemon
  • 1/2 cup nutritional yeast
  • 2 teaspoons Italian seasoning
  • salt and pepper to taste

Instructions

  1. Pour your cup of peas into your colander before you begin cooking the pasta, so they can come to room temperature. When the pasta is ready, pour the boiling water and hot pasta over the thawed peas. This will cook the peas to perfection. Transfer to a large serving bowl, tossing to mix the pasta and peas together.
  2. In your blender or food processor, combine the remaining ingredients, except the salt and pepper, and puree until completely smooth. You can do this in a high speed or a regular blender. With a regular blender, just don't give up! Keep blending, scraping down the sides of the container as needed, until you have a completely smooth cashew cream sauce. Once the sauce is completely smooth, season with salt and pepper, to taste.
  3. Toss the sauce into the pasta and peas, and serve immediately.
