10 Healthy Rhubarb Recipes

Back away from the pie. There are lots of much healthier ways to eat rhubarb instead!

Rhubarb doesn’t get a lot of credit for being the healthy veggie that it is. That’s probably because most people are familiar with it as the costar of strawberry rhubarb pie. But this relative of sorrel has so many more culinary uses than that.

Last week, I shared some of rhubarb’s surprising health benefits. Rhubarb is low in calories and a good source of fiber, vitamins C and K and calcium. It’s also rich in other antioxidants and has been shown to help lower cholesterol.

One quick safety note before we get to the recipes: rhubarb stalks are healthy, but the green leaves are actually poisonous! If you do happen to run across rhubarb with the leaves on, remove and discard them before cooking.

Healthy Rhubarb Recipes

Let’s look at some healthy ways to eat rhubarb.

1. Apple Rhubarb Chutney

This chutney recipe does contain a lot of sugar, but a little bit of spicy, fruity chutney goes a long way when it comes to adding flavor to savory dishes.

2. Strawberry Rhubarb Coconut Milk Popsicles

3. Summery Strawberry Fennel Salad

Rhubarb’s naturally tart flavor shines in the dressing for this sweet-and-savory strawberry salad. The best part? You make the dressing in the blender, so it’s super quick and easy!

4. Carrot Rhubarb Soup

This sugar-free rhubarb recipe pairs sweet carrots and creamy coconut milk with tart rhubarb and warming spices for a cozy, pureed soup.
