Oil-Free Za’atar Roasted Chickpeas

These tangy, tasty Za’atar Roasted Chickpeas use a secret ingredient to get those delicious spices to stick. The best part? The secret ingredient is free!

This crunchy, flavorful snack is packed with protein and fiber. Eat your Za’atar Roasted Chickpeas by the handful or use them to top your next salad or bowl of soup.

If you’re new to Za’atar, prepare to meet a new favorite spice blend. This Middle Eastern herb blend stars sumac, which gives it a bright, citrusy flavor. It’s often served mixed with olive oil and bread on the side for dipping. Za’atar Roasted Chickpeas are an oil-free, protein-packed way to enjoy those flavors!

The secret to this recipe is using aquafaba—the liquid from the canned chickpeas—as the oil replacer. Aquafaba is a great binder, which makes it perfect for this recipe. And since you’re cracking a can of chickpeas anyway, it adds zero dollars to the cost of this recipe.
