Pesto Minestrone Soup

A whole meal unto itself, this soup is a flavorful twist on a classic. You can make the pesto yourself or buy one of the wonderful pestos that are available at the market.

½ onion, cubed
1 leek, sliced thinly
½ teaspoon garlic, minced
2 tablespoons olive oil
1 cup potatoes, cubed
2 cups white beans, drained and rinsed
9 cups water
½ head Swiss chard, chopped
1 cup green cabbage, shredded
½ cup green beans, frozen
½ cup tomatoes, chopped
½ cup brown rice, cooked
4 tablespoons pesto
1 teaspoon sea salt
2 tablespoons vegetable base
½ teaspoon pepper
1 ½ teaspoon granulated onion
1 teaspoon granulated garlic
1 tablespoon parmesan cheese, powdered

  • In soup pot on medium low heat, sauté leeks, onions and garlic in olive oil.
  • Add potatoes, beans, water and seasonings. Bring to a boil and cook on medium high for 20 minutes.
  • Add in the cabbage, frozen green beans and Swiss chard. Continue to cook another 20 minutes.
  • Add tomatoes. Cook another 5 minutes.
  • Remove from heat, add pesto and parmesan cheese.

Serves: 4-6
Total cooking time: 1 hour

Why have I got "life is a minestrone" by 10CC going through my head? Well, it might be because I just made a pot of Minestrone soup a few differences but very much on the right theme only missing the Swiss chard and green beans well that's something for next time. I have a bowl of soup to have just now.
