Vegan Black Bean Burgers with Cream Sauce

Are you tired of veggie burgers that use eggs or bread crumbs to hold them together? Try this recipe for a tasty vegan and gluten free option.

Makes 8-10 burgers

  • 2 cans (15 oz) black beans, drained, or 3 cups of home-cooked beans
  • 1 cup shredded zucchini
  • ½ cup gluten free oatmeal or quinoa flakes
  • ¼ cup nutritional yeast
  • 2 tablespoons chili powder
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ teaspoon ground cumin
  • 2 tablespoons olive oil

  1. Mash beans in a bowl.
  2. Add the zucchini, oatmeal, nutritional yeast, chili powder, salt, baking powder and cumin. Mix well.
  3. Shape into patties and brush both sides with oil.
  4. Place on a baking sheet.
  5. Broil 4-5 minutes on each side at 3-4 inches from the heat.

Serve with salsa, guacamole, your favorite sauce, or try this versatile vegan cream sauce. You can adjust the seasonings to suit your family’s tastes and easily double a regular batch of sauce to make sure there’s enough to go around.

Easy Vegan Cream Sauce

  • ½ cup gluten free flour (can be any kind, such as chickpea, buckwheat or millet)
  • ½ cup nutritional yeast flakes
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon dry mustard powder or 1 tsp prepared mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional)
  • 2 cups water or nondairy milk
  • ¼ cup olive oil
  • 1 teaspoon miso
  • Salt to taste

  1. Combine all the dry ingredients in a medium sized pot.
  2. Gradually whisk in the water or milk, oil and miso.
  3. Cook over medium heat, stirring regularly. As it heats and thickens, you need to stir almost constantly towards the end.
  4. Season with salt to taste.
