Vegan Tempeh Bacon Sandwich

Baked tempeh bacon is the base for this flavorful, protein-packed Vegan Tempeh Bacon Sandwich that’s delightful for breakfast or for lunch.

The secret to making this Vegan Bacon Sandwich is starting the day before you want to eat it. Marinating the tempeh overnight allows it to really soak in that good seasoning.

Don’t let the nine hour total time on this recipe scare you—you will be asleep for eight of those hours, and for 40 minutes of the remaining hour, you just have tempeh going in the oven. It’s really a super easy recipe.

If you absolutely can’t do an overnight marinade, let the tempeh marinate for at least 30 minutes. Your results will still be tasty, just not as tasty as if you’d waited eight hours/overnight.

Ingredients

    For the Tempeh Bacon
  • 1/4 cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon liquid smoke
  • 1 tablespoon olive oil (optional)
  • 1 teaspoon garlic powder
  • 1 block tempeh, sliced along the short end into 1/8" pieces
  • For the Sandwich
  • 6 slices whole grain bread (toasted or not!)
  • hummus
  • 1 sliced Haas avocado
  • lettuce
  • 1 slicing tomato

Instructions

    Make the Tempeh Bacon the Night Before
  1. In a small bowl, mix together the soy sauce, vinegar, maple syrup, liquid smoke, olive oil, and garlic powder.
  2. Arrange the tempeh in a shallow dish with a lid. Pour on the marinade, and refrigerate overnight.
  3. In the morning, preheat the oven to 350F. Arrange the tempeh in a single layer on a baking sheet lined with parchment paper. Bake 35-40 minutes, flipping after 20 minutes. Your bacon is ready when it's crispy but not burnt.
  4. Make the Vegan Tempeh Bacon Sandwich
  5. Spread the hummus onto your slices of bread, then pile on the bacon, avocado, lettuce, and tomato.

Notes

The 8 hours 20 minute prep time sounds like a lot, but that's because you marinate this bacon overnight for maximum flavor. You will be asleep for all but 20 minutes of the prep.

If you do not want to wait while the tempeh marinates overnight, you can cheat and just marinate for 30 minutes. You'll still end up with delicious tempeh bacon, but it won't be as flavorful as the overnight version.
