This is so incredibly helpful. I went vegan four weeks ago and it's still a little challenging sometimes to find just the recipe I'm looking for.

I love this Ana, If my son, who is 10, had his way, he would just eat mac'n cheese and grilled cheese.

Not a big fan of oatmeal either. I use seven grain hot cereal for the protein and add a few dates. I put it in bowl and pour boiling water on it and let it set in the fridge all day. It tastes good cold for desert. I get the ready to make just add milk pancake mix. I add some pumpkin for the milk and a lot of ginger because I like it. I mix it with the pancake dry mix and let it set a while. If it needs more liquid I might add applesauce or grape juice. The pancakes taste delicious with some crushed pecans and cream.
