I use way too many pre-packaged foods, but here's what I keep in the cupboard:
black beans vegetable boullion popcorn grapeseed oil Green & Black's cocoa powder Dr. McDougal's Vegan soup Mori-Nu Tofu Red beans & rice Brown Rice Protein powder (rice and hemp) pasta tomato sauces potatoes and yams coffee rice cakes corn chips Couscous Fantastic Foods Taco filling granola raisins and other dried fruit Nana's cookie bars

A few of my pantry staples are repeats from Rift and Amelia's lists, because I think they bear repeating.
Nutritional Yeast for sure! Organic brown rice (mostly short-grain, which I use in my sushi, but long-grain too) Quinoa Tamari Nori sheets Dried shiitake mushrooms Beans (all kinds, dried and canned) Steel cut oats & Oat groats Barley Shelled hemp seeds Sesame seeds Agave nectar Doctor Kracker Seeded Spelt Flatbread Canned organic diced tomatoes Tinkyada organic brown rice pastas Food For Life's brown rice tortillas Organic Whole Wheat and Whole Wheat pastry flour Mori-Nu Organic Silken Tofu Spices, lots of spices (I frequently grind my own to have them as fresh as possible) Organic, Fair Trade teas

I was just glancing through the lists again and realized everyone had forgotten Egg Replacer! Ener-G and Red Mill makes this stuff. Very handy for quickly converting a non vegan baking recipe.
Yep indeed, I've got Ener-G egg replacer in my pantry, though I use a variety of egg replacers (ground flaxseeds mixed w/water, tofu, etc.) Some replacers work better than others in certain recipes, so I try different ones from time to time. But Ener-G is a great pantry item!
(PS I haven't forgotten the kitchen gadget suggestion thread, just haven't had time! Will try to do that today.)

Oohh I did pick up some Energ-G egg replacer and can't wait to try it. I've used banana (where applicable), corn starch and arrowroot powder as substitutes.
