Working in the area of nutrition, I have found that 95% of people are too acid: burned out & stressed out. They are eating an unbalanced diet which is too acidic. Acid by its nature breaks down bodily tissue; acid is highly irritating to delicate internal tissue of the body.
Our blood needs to be around 7.35 to be at its optimum level. A slight change in the pH of the blood to 7.2 could result in death. Thus the blood, as well as most of the body, needs to stay within tight range of alkalinity to function well and be healthy.
Diet needs to Be Alkaline - to Be Energized
Our body is about 20% acidic and 80% alkaline: therefore it is recommended that we consume approximately 20% acidic foods and 80% alkaline foods.
Sadly, most people eat far too many acidic forming foods (proteins, grains, sugars, processed foods) and not enough alkaline foods (fruits and vegetables), which eventually takes their body out of balance. The stimulants tobacco, coffee, tea, and alcohol create an acid environment. Also stress will make the body even more acidic.

How to create a more alkaline body:

Has anyone got off of Atkins and found that any carb at all goes to fat, and thus incredible weight gain afterwards? I had no choice but to return to the high protein after a weight gain of close to 50 pounds (which was 25 more than I lost.)

I've come accrossa really great book that specifically talks on the acid and alkline levels. It's a great source of information and includes all aspects of a healthier life, not just food but exercise, correct breathing and the best water to drink. The book is written by author Daniel Reid, you may have heard of him. He studies alot of Eastern philosophies and the Tao of life in general. The book is called " The Tao of Detox ". If you find it, read through it and see what you think, it's wonderful, a really good guide. He also has a collection of many other books which I am also reading. Hope this helps.

Just because a food is acid forming does not mean it is necessarily not good for us; it is all about BALANCE!

For the above mentioned fruits, I am afraid they are not as alkalizing...
Especially the Grapefruit and Tangerine, they cause me a great deal of joint pain... They are not the same family of orange, orange is something very neutral and mild...
If taking it too much with empty stomach makes acid...
Tropical Fruits are numerous, I am not sure what they are referring to...

IC G., when it comes to alkaline forming foods what is important to know is that a food can start out as an acid food but in the body becomes alkaline as it makes it's way through, which is why we say alkaline forming.
I totally agree with you! Especially things like lemon! But tangerine and grapefruit, no matter how sweet they can be, they are acid to me...
Most fruits are acid to begin with but do turn to alkaline once they go throught the body but they feel very acid in the stomach. The stomach if it is a healthy is full of acidic juices to break down our food. So for you I suspect that it is too much acid al at once. The other thing that could be going on is that you may simply have a sensitivity to these fruits at this time. One of the reasons maybe candida.
I am not a qualified nutritionist or naturopath so all I am saying is from my own readinga and research. If there is someone with qualifications out there to add to this I would love that. I enjoy learning.

Is tofu fermented already or is there some fermenting process that needs to be done at home??? I've been eating it since I became a vegetarian at age 9, but don't know the answer to this question...
What a BUMMER that dried beans are on the acidifying list... I LOVE getting protein from bean, lentils, etc. as the bulk of a meal, in veggie soups, etc.
Hi Janey! There really is nothing wrong with acid foods; it is just the balance that needs to happen. Too often people eat way too many of the acid forming foods neglecting the alkaline ones thus creating an imbalance in the body. Acid foods are easy to fill up on as they are things like toast, cakes, cookies, hamburgers, sandwhiches etc. These are the foods people reach for when the want a quick hunger fix.
Tofu is not fermented; it is coagulated. I find tofu very digestable and eat lots of it.

In 1933 a New York doctor named William Howard Hay published a groundbreaking book, A New Health Era in which he maintains that all disease is caused by "self-poisoning" due to acid accumulation in the body.

I feel bottomless regarding food lately- always hungry- it's noon here and today I've already eaten an orange, an apple w/ a little good peanut butter, miso soup w/ tofu and chard and veggies, 2 slices of lite spelt toast with avocado, and green tea w/mint. I'm pretty sure that my choices are all fine (right?) but why am I so hungry?! I've had fruits, veggies, lean protein, good fats, whole grains... Luckily I'm not craving anything in particular, but I feel empty. Oh yeah, I'm full time breastfeeding, that could be it. I'm cautious to add more carbs... this 75% alkeline and 25% acidifying focus has got me a little hung up!
Regarding the fruit breakfasts and vegetable dinners, I think these foods take around 1/2 hour to digest... easy to see why they're better as a snack or in addition to a well-balanced meal for feeling more satisfied.

If I wake up in the morning with stiffness in my joints and that "achey breaky" feeling in my body, a cup or two of bancha tea really helps to tip my body's pH back toward alkaline.
If that doesn't work quickly enough, I'll soak 3 umeboschi plums in 16 oz. of bancha tea and drink the ume/bancha tea ...
"Umeboshi Plum" is really an apricot and available in health food stores. It's most significant value in this case is it is the most alkalanizing food and helps neutralize acid created by faulty food choices.
By taking 10 grams of umeboshi it is possible to neutralize the acidity created by consuming 100 grams of sugar.
You can use umeboshi for:
* over acidity in the stomach
* intestinal problems
* after consuming a harmful food such as sugar.

Macrobiotic Home Remedies Made From Bancha/Kukicha Tea
Several folk medicines for specific medical conditions are made by combining twig tea or bancha with other medicinal foods such as gomashio (sesame seeds and sea salt), soya sauce and umeboshi. Although there is no scientific research confirming the effectiveness of these tonics, there is a wealth of anecdotal evidence, and many of these remedies have roots in the ancient traditional medicines of Japan and China.

Crush the meat of one umeboshi and add 1/2 teaspoon soya sauce to it. Add boiling bancha tea (1/2 -1 cup, according to individual taste). You may also add several drops of ginger juice. Stir well and drink. For children use without ginger and with less soya sauce.
This drink can be useful for the following conditions:
- headache caused by excessive consumption of foods high in sugar or oil
- stomach trouble (nausea, lack of appetite)
- anaemia, weak blood and weak circulation
- intoxication by carbon monoxide
Sho-Ban or Soy-Bancha:
Put one or two teaspoons of soya sauce in a cup. Add hot bancha to fill the cup. This tea will have a strengthening and refreshing effect on healthy people. Soya sauce as well as bancha have an alkalinising effect on acidic blood which can be caused by overactivity or eating lots of sugary foods or animal foods. This tonic is known to activate the circulation.
Take 1 to 2 cups a day until relief is obtained, but do not continue for more than 3 to 4 days in a row. If you add a little grated ginger to this drink it is particularly effective in cases of stomach trouble such as nausea and flatulence.
This drink can be useful for the following conditions:
- stomach troubles (in particular stomach acidity and indigestion)
- menstrual cramps, flatulence
- carbon monoxide intoxication
Add a cup of hot bancha to a teaspoon of gomashio, and stir well. Use this drink the same way as Sho-ban above. It has been found to be particularly useful for stomach or intestinal cramps. It also helps relieve tiredness in the summer.
Strengthens digestion, increases vitality, and relieves general fatigue. Dissolve a heaping teaspoon of kuzu powder in 2 teaspoons water and add to 1 cup cold water. Bring the mixture to a boil, reduce the heat to the simmering point, and stir constantly, until the liquid becomes a transparent gelatin. Stir in 1 teaspoon tamari soy sauce and drink while hot.

Also if one is a diabetic this can have an affect on the body of course but there is another blood test which goes with or without being a diabetic and in that it exacerbates many things. Aches and pain, tiredness,exhaustion,feeling malaise or under par for no reason usually, mood swings, cravings and the list goes on. This disorder seriously effects your liver.
This is a simple blood test to see and if you reach over 125 and worse up to 400 this needs to be addressed
What is it Hemachromotosis. Too much iron in the system.
I have one cell. It is genetic and many dont realize they have it. Some have two cells. Two people with this blood disorder shouldnt marry well they can but they CANT HAVE CHILDREN, because the couple are carriers thus the children will have the disorder fully. It is amazing just how many people dont get tested just as its amazing just how many people have this disorder. Usually or sometimes a dr doesnt think to test for it. If you have two cells then one has to have blood taken. Mostly its with men as they dont menstruate and women do therefore it may not be picked up. If diagnosed with hemachromatosis then ALL FAMILY MEMBERS NEED TO BE TESTED.
I have a friend who has diabetes and I remember that she was always so tired she has one cell also. Her blood count was 400 and even tho she has one cell is has to have her blood taken once a month. Now she says she is she is fighting fitter and well. Good hey. She had gone thru her entire life with food problems aches n pains and major tiredness but no one realized that even tho she had one cell that her reading was so high. Its not well known apart from drs who are experienced in this disorder. So I must have mine checked again and note the count. Those who have blood tests should also ask for this test too and note it MUST be under 125 and your fine over that and you have to insist on them taking blood once a mth and by doing that you will feel heaps better.

When you measure urine pH and then saliva pH you will KNOW the difference ... hav eyou tried it?
... my spouse (who has half a uni exam as chemist) looked through some biochemical stuff. It could be that I have an imbalance between sodium and potassium. Potassium is needed to balance the levels of sodium in the cells. If there is a surplus of sodium, the potassium in the body ends up levelling the sodium. But, at the same time potassium is needed to produce gastric juice. Hence my problems, it would seem. When I eat food with salt in it, the elements needed to produce gastric juice vanishes to level the salt I just ate and I get an awful tummy ache which can be alleviated by HCl pills. Now it adds up. I don't usually add lots of salt to my food, but it is Everywhere. The last two weeks, spouse and I have cut salt (NaCl) to a minimum. We both feel much better, and he wasn't really ill to begin with... On top of that, we learned that nitrates are a no-no for me, so no prepared meats or cheese. Most cheese have nitrates in them here (Sweden).
I have been eating 80/20 alkaline foods, drinking green drinks, taking chlorophyll, and other things he recommends -- for just 7 days now. I do feel better, though my pH is still very low first thing in the morning.

There is one other cause of stomach "soreness", the recently found cause of many ulcers is viral in nature. I have personally found that ingestion of cayenne 5 or more times a week, has completely eliminated all trace of any ulcers I once had. Capsicum, the active ingrediant in Cayenne, is a harsh alkaline. As for that pdf, as in many like it that include an advert, it begins accurately enough, then, when it gets to sales of the product, contradicts many earlier statements. I had not read through to the end before posting that link; that is my fault and I apologize for that.
One thing to note, it did state accurately enough that food leaves the stomach at about pH 3.5 or so, which is greatly reduced in acidity, but is no where near alkaline (pH above 7; seven being neutral).

Mike the info you stated above does not take the whole into consideration.
We are not simply concerned with stomach acid and it is not about some foods being acidic to begin with; it is about foods being acid or alkaline forming in the body. The word important here is forming.
Also, one only has to do some consistent daily urine testing for a few months (and yes I did do this ) to see how foods affect the acid alkaline balance of the body. I saw very clearly what was happening as I worked to bring a balance back to my ill body.

You mentioned that you'd done the urine testing for the acid/alkaline balance - I'm assuming it's the PH testing. Several years ago I started using the Hydrion Papers (4.5-7.5 scale), which are a saliva test. Everything I read comparing the two indicated that the saliva test is more accurate. What's your take on that?
A sidenote: I remember an old Army doctor using PH saliva tests on me when I was about 4 as I was severely anemic. He could tell at a glance whether my health was improving or not, although they STILL did the finger-poke every day! Nowadays most doctors think PH testing is archaic and don't utilize them, which is a great loss to our health since they can provide an overall snapshot of body status.
Wow So many equations to think about here in order to be healthy. But I am glad you have hit on this topic as I have eaten healthy all my life and was taught by my father at an early age that a sick body is an acidic one and that acid counteracts acid. In other words an acidic food can turn your body to an alcaline condition. As long as your urine is pale yellow it is a pretty good indication of good health. Drinking enough water thins the blood and cleanses the kidneys/liver. So I believe eating everything in moderation is simply the key. It seems like a simple solution to a complicated problem but we shouldnt make eating so complicated. After all we are not consumming huge amts of any one food to do that much damage --Are we?
Good points and Kat, it does not have to be that complicated: the EATING part of our lives.
The problem is that often people are eating large quantities of the unhealthy foods...addictions to caffiene, carbs, sugar and meat are the main culperts. When I am advsing the people I work with I do keep it simple by telling them to just eat more fruit and vegetables as that is almost always lacking in the average person's diet. I figure if they do that then the acid/alkaline and too much protien will be adressed.

There are sound physiological reasons for eating foods in compatible combinations. In other words, some foods, if mixed in the digestive system, will cause distress!
The principles of food combining are dictated by digestive chemistry. Different foods are digested differently...
- Starchy foods require an alkaline digestive medium which is supplied initially in the mouth by the enzyme ptyalin;
- Protein foods require an acid medium for digestion- hydrochloric acid.
As any student of chemistry will assure you, acids and bases (alkalis) neutralize each other. If you eat a starch with a protein, digestion is impaired or completely arrested!
The undigested food mass can cause various kinds of digestive disorders. Undigested food becomes soil for bacteria which ferment and decompose it. Its by products are poisonous, one of which, alcohol, is a narcotic that destroys or inhibits nerve function.
It plays havoc with nerves of the digestive tract, suspending their vital action such that constipation may well be a result! As set forth in Dr. Herbert Shelton's FOOD COMBINING MADE EASY these are the salient rules for proper food combining.
The Nine Basic Rules of Proper Food Combining:
1. Eat acids and starches at separate meals. Acids neutralize the alkaline medium required for starch digestion and the result is fermentation and indigestion.
2. Eat protein foods and carbohydrate foods at separate meals. Protein foods require an acid medium for digestion.
3. Eat but one kind of protein food at a meal.
4. Eat proteins and acid foods at separate meals. The acids of acid foods inhibit the secretion of the digestive acids required for protein digestion. Undigested protein putrefies in bacterial decomposition and produces some potent poisons.
5. Eat fats and proteins at separate meals. Some foods, especially nuts, are over 50% fat and require hours for digestion.
6. Eat sugars (fruits) and proteins at separate meals.
7. Eat sugars (fruits) and starchy foods at separate meals. Fruits undergo no digestion in the stomach and are held up if eaten with foods that require digestion in the stomach.
8. Eat melons alone. They combine with almost no other food.
9. Desert the desserts. Eaten on top of meals they lie heavy on the stomach, requiring no digestion there, and ferment. Bacteria turn them into alcohols and vinegars and acetic acids.

80% of our diet is best if it is Alkaline and so meat eaters need to be aware that meat is very acidic. That said it is not just meat eaters that get an imbalance by being too acidic; vegetarians do too. I was working with a man who had been a vegetarian for 35 last week and his diet was way too acidic!
I am reminded of this topic today as I prepare for a small group coming over with their food journals to look see how they can get it more balanced in the alkaline department.
From all of the reading and research I have done over the last 30 years this is what I believe is the place to start whe wanting to eat a balanced healthy diet.
If you balance the Alkaline/Acid then so much gets addressed. You will be eating lots of vegetables and fruits which is what the average person's diet lacks. And there is no way you can eat too many carbs or too much protein.
So Balance the Alkaline/Acid of your diet andmuch will be taken care of.

I don´t know about you, but here, in Europe, theres not much information about alkaline - acid balance.
In fact, I had never heard anyone talking about this topic before.
I found very interesting the fact that a slight change in the pH could be so dramatic, and that stress can make people's organism more acidic.
People should be more aware of what they eat I think..

Thank you for the info. What if you have acid-reflux disease and an ulcer? Anymore it doesn't matter what I eat or drink I still have a lot of acid. It is even showing up as a skin rash. Yes, I am going to the doctor this month. Debbie
It may be worth checking into, but frequently people with "acid reflux disease" may actually have too little hydrochloric acid in their stomach and that's why they have problems. Taking Swedish Bitters or digestive enzymes can help. You may want to find a Naturopath or other practitioner to talk to about this.

Have you worked with balancing your acid/alkaline foods?
I find in my line of work that almost everyone that comes to see me is eating a diet that is imbalanced in the direction of being too acidic. And I have seen people through diet and some concentrated foods decrease their acid reflux medication.
So you might as well work with this principle....it does not cost anything and you will end up with a healthier diet.
If asked for one Healthy Eating principle that would make all of the difference; I would say balance your Acid/Alkaline foods. So do read the info here and if you would like personal help from me then just ask.

Most people are too Acid. An easy way to alkalize is to eat watermelon and have lemon water....each once a day and separately.

I notice lately I've been craving fruits that are juicy...maybe this could be because my body has become too acidic? Maybe...who knows.
Rachel, that could be what is happening. If that is so then eat lots of green leafy veg too as they are highly alkaline forming. Fruit can also be a sweet craving so we do not want to eat too much.
One STRANGE thing I found that decreased my acidity as measured by PH strips on saliva was drinking WATER after a meal. Some people discourage this since they say it dilutes your digestive juices but it worked fine for me!

hhmm, I posted here several days ago and for some reason it's not here. I was wondering if anyone else has ever had this, the info with the PH strips state urine is slightly more acidic than saliva. I am the opposite. My urine is finally alkaline, Thank the Lord, but my saliva is still acidic. I' thinking it could be from my amalgams. I will let you know after I get them safely removed! I have been doing green smoothies for 2 years and was hoping that would make me alkaline, it helped but didn't bring it into the normal range. I was sure eating Veganish for the last almost 9 months would finally change it but nope. I started drinking alkaline water a month ago and my urine is now normal! Yeah!! I'm so thankful something is working because I had cancer cells 7 years ago and I know that cancer can only grow in an acidic body! Thanks Diana for all the great info!!

One other I would add is that most MEDICINES are very acidic! Even if they don't have short term side effects - they will still acidify your body over time.

Randy I agree with you and had that serious problem as well that turned into GERD, Stomach ulcers and esophical ulcers as well.
I decided to ditch some of the meds b/c they were seriously making me ill and I swapped for Liquid Chlorophyll.
Woweee does this stuff work, however, you can get all your greens and vitamise them and drink it too but I decided to buy a bottle of Liquid Chlorophyll instead and late last year into this year I was pretty serious and now??? I dont have that problem anymore with all the side effects it brings. I can live a better life thanks to Liquid Chlorophyll. I started off with a 1/2 capful into 750mls of water.. a bottle and did this twice per day.
It helps you detox but more importantly it balances your acid/alkaline situation in the body as well as a heap of other amazing things. I love it. A lady told me today at the gym to add it to your tea as then it turns into a herbal tea. Must try it.
You can certainly feel the difference from taking it and not taking it. An amazing feeling b/c it gives you lots of energy. Im all for it for if you dont know about it and do it you too will be amazed and decide to drink it daily to keep the body well and healthy.

Here is some food for thought:
To neutralize a glass of cola with a pH of 2.5, it would take 32 glasses of alkaline water with a pH of 10.
I was curious about the minerals in water....could that throw off our balance?
For instance, our water contents are:
Hardness 12 gpg
Iron 24 ppm
TDS (total dissolved solids) 925 ppm
PH 6.2 ppm
Although we have a water softener, we often get red water or orange whites (very grrrrr).
So I'm wondering...would this affect a person's alkaline-acid balance?
Good for you Diana. I know its really nice to drink but the best thing of all is that its AMAZING FOR INDIGESTION and GERD and anything like that including IBS. Not only that I was speaking to a young mum the other day at the Gym and dont ask how we got speaking about Liquid Chlorophyll but we did and she raved on about it and I said all my good points about it and added that it also had made my teeth white!!! She did a quiet scream and said YESSSSSSSSSSSSSSSSSSSSSSS...I noticed that as well! lol and we both smiled at each other showing our teeth!
It is also a fantastic body and breath deodorizer as well. It also rids the body of inflammation and infections. Im using it on a tiny tiny leg ulcer that I have no idea how I got and used it before bed as it had a large red circle around the sore. Say hmmmm 2.1/2 inches of redness and by morning it had cleared up to 1/2 inch of redness surrounding the sore. Water?.......... you have to learn to read the bottle of water you are drinking and make sure its got a incy wincy bit of sodium in it and nothing else Water sure be pure anyway. Put water into a brown bottle and leave it in the sun. It will get rid of the impurities. I ve never heard of red water before unless its been tainted or its from a natural bore. Bore water here tastes ghastly but the water in MELBOURNE Australia is DELICIOUS!
Mind you if I was buying water I am very careful as to who creates it and who sells it and and and and. Im fussy b/c you can be 'HAD' with bottled water. Is there no sanctity in anything? ???!!
Rachel, minerals naturally occurring in the water are alkalizing which is good.
We have well water...no other alternative where I live unfortunately. I can't afford to buy bottled water. I actually am living below the poverty levels so am living with my dad. I buy my own stuff & make my own meals. It's tough times for sure.

When we first moved in, I immediately got the water tested (I was tired of dealing with hard, greasy water). Well they told us our water was not safe to drink.
We cook with our water but don't drink it...even with the water softener.
