Susan R. No intro thread... Well, I didn't see anywhere to post an introduction, so I guess I'll do it here.
I'm Susan, once vegan, now heart-attack-waiting-to-happen! For many years, I ate a vegan diet. After the birth of my 3rd child, I quickly saw that it was going to be a lot harder to keep it up...and I craved a steak like you wouldn't believe! Now, with 4 kids, I consider getting to scarf down a banana for breakfast, a bagel for lunch (smothered in cream cheese), and hot dogs and macaroni for dinner eating a decent meal. My family is in dire need of a diet makeover!
There are a few things I just WILL NOT give up: coffee, chocolate, and cheese! They've gotten me this far, and I'm not stopping now (LOL)!
We do good, in that we don't fry, and we do try to work with all the food groups, but I know that we could improve A LOT. So, that's why I'm here. I need to learn some new tips on how to eat healthier. It's been 5 years, and I've gotten used to junk! Also, my children have ADHD and 2 are disabled. I've read many places that there are certain diets that could help them. Glad to be here! [send green star]

Hello, family of 4 is what I am part of. Hubby had gallbladder out a few years ago and fortunately with my interest in herbs and decent cooking he has has very little problem. I hear so many do have a bad time of it. Two children which I homeschool are growing fine and at least my daughter is the one who preferes fruits and veges to most meats and junk. Although she does have a love of Chocolate. I am 45 and in pretty good shape. Mostly thing and Type A which helps burn those calories. I too prefer most healthy foods and purposefully eat those first before indulging in "junk". Even my desserts can be healthy when balanced. I look forward to sharing and learning. Hi. I'm obviously new here. I want to learn how to eat healthy, i'm in a family of 7, i'm only 15... so i don't really do the cooking. I want to eat healthier so that i feel good more and live longer. I don't really cook alot, but i want to learn more about that too. I've cooked some things, but not alot. I am 5 foot exactly and i weight 88 pounds, so i'm on the lower end of the scale and one a the people "at risk" for potential eating disorders.... but so far i've been healthy and a relativly healthy eater, i love fruits and veggies and try to stay away from french fries and red meats and i eat whole wheat instead of white bread... but i want to learn more about what i could do to improve my diet...

am new to the group. I like what the group is about. Am joining by conviction. I admit, I happen to cook up something hastily. But I just happen.
So, leaving to simmer ? It´s always a relish...I leave to simmer. I take the time. I love it. Coz every thing has to open up. Spices and herbs too, when added to food, to part their " fragrance " to it...
I´m persuaded and hope anyway, that I´ll get to know some friends and some connoisseurs too, in this group.

I had been getting ready to start some extensive research into foods, recipes, etc. because my budget just got chopped by over $400 a month. I want to be able to at least buy the basics as organics, and I want to be able to continue eating in a healthy way - and I needed ideas, recipes, etc. It's wonderful to have it all in one place - so THANK YOU to everyone who's contributed. Howdy! Not sure how this works...new to life in Arkansas. Retired, independent, homesteader, all things nature and natural, make soap, have a dog, garden, remodeling fixer-upper home, recently got computer and satellite, old world, old fashioned, hippie mentality, universal spirituality versus one particular religion, Tai Chi Chung, Tao, Wu Wei, Buddah, Redneck, etc., reading, music, the simple life. Hello folks, I'm all-American who is an armchair traveller and have "visited" Indonesia via the shortwave radio, RRI, not often catching it in English but even when I don't, I find Indonesian music quite catchy. I love it.
Also love the cuisines of the world, as it happens. A recent diet issue for me has been blood pressure. Yes, I am also overweight but that part doesn't have to do with an unhealthy diet--it has more to do with a sedentary desk job that I gave up about 5 years ago to dig in my backyard garden and grow all kinds of healthy things. Nonetheless, I still have had a recently acquired bloodpressure issue and have to tailor my eats around that.

I love this board. I love different styles of cooking, although with my husband gone, my parents don't like for me to experiment on them. So I can't wait to have Kev home ... for another reason.. Cooking! Middle Eastern, Morroccan, Indian, Mexican, Japanese, Chinese and Thai..

I've been a member for a while but never really introduced myself. I read a lot of what y'all write but haven't really contributed.
I've been a foodie most of my adult life. I learned how to cook when I was a kid since my mom went on strike. Well, I got hungry and figured out where the cookbooks were. When I moved overseas and couldn't get the foods I craved, I figured out how to make them.
While I'm a pretty good cook, now I have a new challenge. I was just diagnosed with diabetes. So now I have to learn how to face that in the kitchen. I don't want food to be the enemy and I certainly don't want this disease/disorder to define who I am... while I want to be healthy and make smart choices, I still want to enjoy good food. I figured there has to be some other like-minded people out there who would be willing to share any ideas/tips/recipes or whatever wisdom they could.

Hello everyone.
My name is Elvin. I am 39 years old and mum to 3 children age 12,10 and 2.
I am a committed vegetarian. (I will point out here that to me a vegetarian eats no flesh of any kind. Nothing that ever had a pulse or a sentient thought.)
I do eat dairy though and eggs from my hens because I know they have been treated well.
I have problems though as I am allergic to both nuts and peppers and most vegetarian recipes seem to contain one or other or both of these items. . So I am constantly looking for nut and pepper free veggie recipes to light up my life!
Hopefully some of you can help me, and in turn I will help you if I can.

I enjoy cooking Indian food, shopping for the ingredients (it smells sooooo wonderful in the Indian groceries!), and am fortunate enough to live close enough to Kalachandji's to take Indian cooking classes. If my kitchen were a bit bigger, I'd probably do it more often.
Well, now I'm off to browse through those folders since I may be shopping for and cooking some of these recipes later this week.

I have three great children & a wonderful husband. My oldest son is overseas. My daughter Stephanie lives in jarratt, va. My youngest son goes to Nottoway high school. I really need to eat better than I do. I eat mostly junk food, End up with a heart burn every single day. I drink lots of coffee. I know I need to cut back from the coffee. I also smoke. Hi everyone -I am new to this site. I am a vegetarian and so are two of my five children, and so far the recipes I have seen are awesome. It is not easy to feed vegetarian children-I eat anything! but my kids are particular-like most kids, and so far I have found alot of recipes that meet our needs-easy ingredients, and no meat. My daughter is homeschooled and part of her "education" has been teaching her life skills-like cooking. This is a wonderful group of people-I found people that are food lovers like us-thanks for such a great website!!!
I looked through our list of topics and didn't see soup listed...I'm sure there are plenty of soups lurking around inside all those threads, but since I'm fairly new here myself, I wasn't sure where to find them.
I did look some here on care2 and found Spring Tonic Soup. I'm not sure if that's the kind of thing you're looking for or not. I'll bet some other folks here have some fabulous suggestions!
I love soup, and even though I like to eat vegetarian as much as I can, I personally reach for chicken noodle soup when I feel bad.

Diana, I sure will check out those soup recipes. I had a great healthy soup recipe 1 year ago from AOL cooking, i lost it. I am a little better now, so I guess I will try the chicken noodle soup today.

Hello, my name is Trudy and you may or may not know me, as my nic goes.. but what we can do here is combine our knowledge and cooking talents in such a way that it benefits all involved !! Weight watchers move over ! lol
I'm mainly interested in slow cooker recipes since the little leaflet I got with my new Crock Pot was entirely too limited !! Farberware slow cooker I hope it lasts as long as my last one did...30 years ! and I did use it from time to time mainly for corned beef and cabbage.

About the nutrition/cook book I am putting together; it is one entirely of my own recipes and tips. Although I may do another one based on the recipes here and donate the profits to a worthy cause which I am still thinking about as there are so many on my list. Of course I would have to get the permission of anyone's recipes or tips I used.

I've been vegan for 11 years now. I became vegan while living in England, back when Tesco's vowed not to charge more for organic veggies than for regular ones. My boyfriend and I had a menu schedule so we always knew what we were going to eat, and always knew exactly what to buy at the grocery store.

Hello to all members. I am new to this group and site. I am a mom of 3 and married for 9 years. I am trying to eat healthy but its difficult on a budget. Isnt it a shame when healthy food cost soo much more than the crap? Well I work full time and am trying to go back to school. I am also a Wiccan ( willing to answer any ? on that),I have Rheumotoid Arthritis (just diagnosed), deal with hypothyroid (take daily meds) and Just want to be as healthy as I can get. Hi, thanks for the invite Carol. I basically eat anything that doesn't eat me first. I do try and eat moderately, that being red meat, more of chicken, fish, and Veggies. Hard to eat healthy in my job, of all places, the hospital, the food th ey serve the personnel isn't always the best -meaning the portion and sometimes the way its cooked.
I look forward to reading all about the members and the goods and suggestions on how to cook healthy, wealthy,and wise !

To me, it's quite a mind-set to want to live healthier lives. It's not so much WHAT you're eating, but WHY you're eating that. And with every recipe or idea, there should be some note to the importance of the amounts you should intake of even a totally "healthy" recipe.
I look forward to being a part of such a huge group! I think you're never too old to learn a new trick, and maybe the older you are the more you have learned along the path to staying healthy!

The main thing is that this group is full of people who truly do make a difference in their way of eating. I totally eat the way I promote with only the occassional divergence when I am out at a party or restaurant but even then I make fairly healthy choices.
One thing about this group is that I have allowed it to be flexible in that there are many recipes here with ingredients that I would not ever use in my cooking. The main one is sugar and others that you will see occasionally are things like bacon, cups of cream.
The reason I tell you this is so that you like me can be a little discerning when looking as some of the recipes. For the most part the recipes are healthy and you will learn lots by reading the vast amount of folders filled with information. I learn from this group too and that is good and enjoyable for me.
Please do post your comments and recipes that is how it works here and I look forward to seeing you around.

I'm a 37 yr young mother of 2. I am looking to get into healthy cooking for my own as well as my familys benifit. I quit smoking in 04 and have added 20 lbs putting me 14 lbs over the high end of my "ideal weight". I have a 10 yr old who would rather NOT eat than eat something "healthy" and is underweight, and a 7 yr old who has a wonderful appitite and adventur for trying new foods.
I need to find a way to make healthy cooking as "easy" in my mind as grabing a box of something. I try to buy as much Organic as possible, and have a food pyramid chart I'm working with kids so they get more balance during the day.
I hope to be albe to contribute to the board, as well as gain the knowledge that I need to get myself and my family eathing well.
I found that eating healthy can become a habit, too especially when I started reading the labels ... anything I can't pronounce and don't understand the meaning of, doesn't pass my lips
Hi we are a family of 4 who radical unschoolers. We have a bit interest in food as my 2nd son had allergies form birth and as I had to breastfeed I was the one that had to give up gluten, soya, all dairy, yeast, caffeine and chocolate. He has over come these most of these although he has rice milk and soya ice cream. At the moment we are all seeing a Kenesiologist and he is dealing with our intolerance's and allergies. We buy organic, use a local veg box scheme a local wholefood bulk supplier and only us one supermarket for bits that we can not get from these. We are all meat eaters although Hubby and I eat a lot of vegetarian meals as organic meat is too expensive for us all to eat everyday. I struggle with breakfast as this is when I crave animal products the most and there is never anything to eat along that line.

Breakfast.... we do have a folder here BREAKFAST/BRUNCH What I do know is that in the morning our bodies need to cleanse as we break the fast so fruit is best. Also the brain needs quick nourishment to become active and that comes best from fruit. Hoping that this will help you in your breakfast choices.

Hi everyone,
I am new to the group and have recently been learning why we should be eating healthy foods. A subject that I have ignored for so long. I have been learning the some of the health problems we are having in our society is because of our eating habits.
I have learned that only 17% of the population is eating their daily requirements of 5-9 servings of fruits and vegetables daily. Let me be the first to tell you that I am not one of them.
I have recently became a distributor for Monavie, back in March. During this time frame, I have learned and heard some amazing stories about people who are drinking Monavie. I don't want to go any further than that, because Monavie does not claim to cure or prevent diseases. But, wow it is amazing what an effect can have on a person when they are getting the right foods.
Monavie is a nutritional supplement juice with a blend of 19 fruits and the acai berry is the main fruit.

I am 59 yr old and been cooking for 50 years...I first learned to cook thru the 4-H Club when I was 9...and we always used fresh ingredients and always cooked from scratch...which I still do to this day! Hello, my name is Cassie. I'm a junk food junkie in my 30's and I want to start taking better care of myself. Until recently, I hadn't given much thought to what I ate and never exercised for more than a couple weeks at a time. I lived on frozen microwaved dinners and take out. The only cooking I did was hamburgers and mac and cheese, being one of the few foods my son liked, and didn't take too much time to cook. I did go all out for holidays, making a full dinner on Christmas.
But I want to take care of myself, and live a longer, healthier life.
First ,a remark on eggplant : as was stated, it is a member of the nightshade family which is not something arthritics should eat too much of. So ,peppers & eggplant should be eaten in moderation . Meanwhile, I have a recipe which we love .You take salmon steaks(4),1/3 cup low sodium soy sauce , a couple of slices of gingerroot ,cut into julienne strips(don't need to be peeled,as they're just to flavour the marinate) 2-3 cloves minced garlic and 1 teaspoon of sugar . Place marinade and salmon steaks in sealed baggie in refrigerator for the day (at least 8 hours. ) Then ,when you want to cook it ,we just place it in an ovenproof dish and place in a preheated 425 degree oven for 10-12 minutes . Then pour off marinate. The salmon is delicious either hot or cold . With all of the talk about the health benefits of eating salmon , it is an easy ,yet delicious way to serve it .

I am new here. I do try to cook healthy foods, but have to admit, I love my red meat. I did have to give up red meat, milk and milk products, wheat & wheat products, & even yeast for about 6 years because of Endometriosis & gall stones.
I have had the Endo removed, & emergency surgery when they finally figured out my gallbladder was three times it's size and ready to burst because it was full of stones. I've been able to eat what ever I want since these operations.
I BBQ, broil, bake, or boil all my meats. I don't fry any of them unless I am using my griddle with drains the fat away from the meat. I love my fruits & veggies, but can't always afford to buy them fresh, to often in the winter, so I do eat a lot of frozen ones. They are cheaper and last a lot longer in the freezer then fresh do in the fridge.
I'm married with 2 boys. One is just turning 14 and the oldest will be 21 in 2008. The oldest boy is getting ready to move out on his own so soon it will be 3 members to my household. I'm a stay at home wife/mother. I enjoy baking & cooking.
I like to use herbs & spices in my foods. I never cook with salt, and don't even put it on my table. I even buy the unsalted butter.

New here, I'm Caitlin, live in New Mexico, and want to start eating healthier. I eat a lot of things that are good for you (rice, salad, fruits if possible) but I eat largish portions and things not too good for you (ramen[not giving it up lolz], bread, cheese, sometimes eggs [giving those last tw things up soon]). I'm not fat by any means, but I am trying to eat healthier, and have a question- Is it healthier to eat mainly food you grow, anda little bit bought, and also is it cheaper? Thanks!
Welcome Caitlin! If you can grow your own then that certainly is best if it is grown organically. Fresh food is definitely best as all the nutrients are still there and live enzymes too.
I find that when I grow my own in the summer my food bill is so much less. I just love eating fruits and vegetables from my garden....but I only have a few months of the year to do that here in northern Canada!

Let's see, I'm: divorced, in my 40's, love to cook and entertain although since the divorce, I eat alone most of the time and I still enjoy learning about healthier and holistic minded cooking. After extended illness, my dad passed away March and traveling and crazy eating habits took my weight all over the place. I stopped smoking last year, all combined adds up to unhealthy added poundage which is against FMS and ~none of my clothes fit...
So! I thought I'd seek help and new ideas maybe wrap my mind around starting back with healthy cooking, budget planning gro. shopping, who knows, maybe I will feel better, kick the blues.

I'm new to this group. I joined because I would like to become a hearthier eater. I started to excersice about two years ago and have lost about 30 pounds but for some reason I'm having trouble losing my last 20 pounds and no matter what I do the weight is staying the same. Although, I don't eat a lot of junk food I do not think that I am eating hearthy. I would like to change my eating habits to a hearthier one and thought that this group may be able to help.

Groans, I love sour dough bread but being diabetic, I have to watch my carbs. I am really not sure how healthy herman starter is but it sure makes good sourdough bread.
Hello. I just joined. I used to eat very unhealthy food in my youth. As a child, I ate at least two packets of salt and vinegar flavor chips a day and lots of chocolate and toffees. As a teen, I ate cheese on white sliced bread with too much butter sandwiches and pork chops. It was not until I became pregnant in my twenties that I began to eat better. Since then, I have gradually improved my diet over the years. Now, I would say I am 'almost' a healthy cook and eater. I try to grow some of my own vegetables as I cannot always afford organic foods, and we are going to be harvesting a half dozen pumpkin this weekend.

I was talking with my love last night at dinner. For us it is so important to eat well. On May 2009, look at the people who are what they eat, very sick. I am vegetarian trying to be vegeTalian, no diary food. To eat raw the more I can. First, detox. My first contact with vegetarian is in 1979 but I went back to dead food (meat). Sometimes it was not easy at all, and a wellknown naturopath told me to eat horse because non greasy, less fat. I did. Truly Dave and I want to eat vegeTalian and the most raw.

My name is Cynthia Davis, I am from Virginia In the new river valley at the foot hills of the blue ridge mountians. The New River is the only river in the world other than the Nile that runs backward away from the ocean. The Blue ridge moutians are part of the appalachians. I have never been very good at eating right so I think maybe I may learn something here. I hope so anyway because as I was reading others intros siting here in front of my lap top I noticed that I was eating fresh pick blackberrys and chasing them with water and a bag of Cheetos (crunchy). This is the way I eat. I start out with good wholesome food and than I throw something tolally fattening and uncalled for in the mix. So I can use all the help I can get. I noticed that you have allot of crock pot recipes. This is the way I like to cook, throw it all in the crock pot and let it stewwww. I am and alway have been a wreck loose haphazardly bad eater, and a even worst cook. I often gaze in wonderment at my husband and grown sons and wonder how in the heck we made this far. I guess I must have done something right every now and then. But now that I am getting on up in age it seems to have become more important to eat right as I would like to stay around for a little while longer. So I will be looking forward to prowling around in this group with you lovely people if you'll have me. LOL
Hello, My name is Zoe Mannick. Although I am only 16 I believe I have a lot to give, and of course a lot to receive. I came across this website and this group in particularly, Google searching carrot pulp recipes. Currently, I am transitioning into a Raw foods diet.
What I am looking for from this group is healthy recipes and tips. On a more personal level, I am searching for a place where I can continue to discover who I am and who I want to be and how they combine into being me. I was a dancer, a mainly ballet dancer from toddler age up until the beginning of Sophomore year(a little after I turned 15). Due to the combination of being an insecure teenage girl and being involved in the competitive dance world I have suffered from multiple eating disorders as well as drug addictions. Over the last couple of months in particular I have realized the importance of what one puts into there body. Healthy eating so far has benefited my energy level, my skin, my hair, my body, my brain function, resulting in a large increase of confidence. It helps me say what I wanna say, do what I wanna do, be what I wanna be, and know it, and not just think it. This has happened over a short two months(tops). Now what I need is to continue improving all aspects of my health; and consumption, in my book, is the first step.
