I love strawberries! But sometimes I get into a rut making the same recipes over and over (like, just plain old strawberries with whipped cream, for instance! But then, just about anything with whipped cream is fine by me...). How do you like to fix your strawberries? Anybody have a recipe for strawberry scones? I have some buttermilk in the fridge that needs to be used...

these scones are good with strawberry sauce (I like to warm mine in the microwave)
1 1/2 cups lightly spooned all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cream of tartar
1/4 cup sugar
1/4 cup butter or margarine
1 egg
1/4 cup buttermilk
Sift the flour, salt, baking soda, cream of tartar and sugar into a medium-size bowl. Cut in the butter with a pastry blender until mixture forms crumbs.
Beat the egg with the buttermilk in a small bowl and add to the flour mixture, stirring to make a soft dough. Turn dough onto a floured surface and roll or pat out into a 1/2 thick inch round. Cut into 8 triangles.
Heat griddle over low to med heat; sprinkle lightly with flour. Bake triangles about 5 min or until the underside is golden brown; turn over and finish baking 4 to 5 min longer. Split and serve strawberry sauce on top.. yummmmmmmmmmmmmm! (recipe below)
Strawberry sauce...
-Puree 1 pint strawberries (washed and hulled) in blender or food processor with 3tbsp sugar and 1tbsp brandy.

My favorite strawberry dish is strawberry shortcake, but made with old fashioned drop butter biscuits, whip cream and sugared sliced strawberries. I also love to make strawberry-banana milk shakes, it is always so quick, easy and refreshing. Just combine strawberries, bananas and vanilla ice cream in a blender and enjoy. =)

When I lived in London I harvested over 70 pounds of strawberries in one season now that was heaven for a strawberry lover like me.
One of my favorites was Strawberry Smoothies.
I would just throw them in the blender with a little apple or orange juice for a simply delicious refreshing drink. For for a more filling breakfast or snack I would add yogurt and or a bannana.

Ingredients for base:
2 cups strawberries
2 large apples
1/4 - 1/2 cup maple syrup or honey
Slice Strawberries, Core and slice apples.
Layer strawberries and apples sprinkling maple syrup or honey in a baking dish.
CRUMBLE TOPPING
Ingredients:
1 ½ cups whole wheat flour
1 cup rolled oats
½ cup chopped walnuts
½ tsp. salt
1/3 cup butter
½ cup honey
Mix dry ingredients together; then mix butter and honey and add to dry ingredients. Mix thoroughly with fingers. Sprinkle on top of fruit
Bake at 350º F. oven for approximately 40 minutes.

Chocolate Covered Strawberries July 20, 2004 1:13 PM
This is the simplest version of chocolate covered strawberries I know, and it never fails to garner raves. Turn the strawberries upside down and insert by the toothpicks into a piece of styrofoam for easy cooling (avoids the flat spot), or simply place them on a sheet of wax paper. White chocolate may be drizzled over the milk chocolate for a fancier look.
Prep Time: approx. 15 Minutes.

16 ounces milk chocolate chips
2 tablespoons shortening
1 pound fresh strawberries with leaves
Directions
1) Insert toothpicks into the tops of the strawberries.
2) In a double boiler, melt the chocolate and shortening, stirring occasionally until smooth.
3) Holding them by the toothpicks, dip the strawberries into the chocolate mixture.
4) Turn the strawberries upside down and insert the toothpick into styrofoam for the chocolate to cool.

Strawberries Romanoff Strawberries are now in season in many markets. Serve this as dessert or remove the liquor and make it into a healthy breakfast.
Ingredients 1 cupyogurt cheese 1/4 cup of light brown sugar (or sub proper amount of stevia) 2 tablespoons orange liquor 1 teaspoon vanilla 1/2 teaspoon cinnamon 2 pints strawberries, hulled and sliced 2 tablespoons pecans, toasted for garnish (optional)
Directions Prepare the yogurt cheese by lining a colander with 3-4 layers of cheesecloth and allowing the whey to strain from one quart of yogurt for 6-8 hours. One quart of yogurt should yield approximately 2 cups of yogurt cheese.
Clean, hull and slice strawberries and set aside. To make the sauce, combine yogurt cheese, brown sugar, orange liquor, vanilla and cinnamon and let sit for one hour. To serve, layer sliced strawberries and sauce into wine glasses. Serve chilled.

Directions Combine cheese, yogurt, onion and pepper in a medium bowl, mixing well. Place in zip lock plastic bag, snip a corner and pipe mixture into shells or use pastry bag or spoon into shells. Combine salsa ingredients in a bowl. Adjust seasoning to taste. Spoon onto top of filling just before serving. Garnish with parsley. Makes 45 hors d'oeuvres.

Use the above products to bake a sponge cake. (up to 2cm/1inch thin layer), let it cool down. Cut in to bands.

1 1/2 glass sugar
5-6 spoons gelatine
1 package vanilla sugar
Dirrections:
Mix sour milk, sugar, vanilla sugar and melted gelatine. Let it cool a bit (Don't let to become too thick but it also can't be liquid.

1 kg strawberries
oil to grease the form
Dirrections:
Wash strawberries, cut in halves. Grease the rectangle form with oil. Place the strawberry halves in it, forming flowers on the bottom and rows at the sides.
Final steps:
Pour some sour cream jelly onto the strawberries, then a layer of sponge cake bands, again jelly etc. (2-3 layers of cake). Finish with a jelly layer.
Put in cold place for 1 hour. Then take it out of the form and enjoy!
P.S. The round bowl is also okay
Now, the last secret: I seldom make a sponge cake myself (waste of time and gas) but use the one from the shop (ussually it's a German stuff) or take some kind of bisquits instead.
I'm a fast cooking fan. Can't do anything that takes lots of time and patience So, my recipes are simple ones.

White wine marinated Strawberrieswith powder sugar
Ingredients:
1ltr Srawberries
½-1 dl powder sugar
1 bottle white wine (ex. Paul Masson, you get great bottle for salade dressing...)
Clean the berries and put them into bowl with dust sugar. How much do uoy put the sugar , it’s up to You ( and your weight..). Pour the wine and let berries lay 4-5 hours or over the night and voila !
I don't really measure the ingredients when doing this stuff. I just mix them all according to my taste.
Fresh strawberries, 7-up and Grenadine. Chill, chill, chill.

2kg (4lb) hulled ripe strawberries 1/2 cup lemon juice 6 cups honey
1.In preserving pan simmer prepared strawberries and lemon huice for 20 minutes, stir occasionally. 2. Add honey, stir until dissolved, then boil rapidly for 45 minutes. Stir occasionally to prevent mixture sticking. 3. Remove scum from surface. Pour jam into hot, sterilised jars, seal and label. Yield: approx. 5 - 6 cups. Recipe from The Australian Honey Cookbook
Cook strawberries in pot with water on low heat for 20 minutes. Add remaining ingredients, stirring continuously. Simmer for 20 more minutes. Chill and serve.

Before Mario Batali became a famous t.v. chef my mom & I ate @Po - his tiny eatery in N.Y.'s Greenwich Village - Balsamic vinegar is sweeter than other vinegars including rice vinegar. Clean & slice ripe strawberries & sprinkle w/sugar (white, brown or even honey to your personal taste). Mix gently w/a spoon - when the berries start exuding their juices it is time to drizzle (to taste) the balsamic vinegar (no need to use the expensive stuff) over the fruit -Ear & enjoy this sweet & tart dessert - very unique flavor....

Jeffrey, good dressing recipe; I would sweeten with stevia as that is what I always put in my salad dressings for that touch of sweetness. Your recipe would also be good in Salad Dressings?!? Would you respost it there too?
