My name is Lesley Huntley and I’m the editor of Earthora.com. It’s nice to virtually meet you! My partner and I live in beautiful New Zealand with our three and four year old and silver tabby cat, Eleanor.
I started my career as a chef, and have always had a healthy (excuse the pun!) interest in food. I’ve always been committed to cooking almost all our own meals, knowing the profound affect good nutrition has on our well-being. I’m always trying to come up with more ways to eat less processed crap and more whole, natural foods.
My weekends are spent in my garden where I grow most of our vegetables organically. I’m happiest there, up to my elbows in sheep poo, in mud soaked gumboots and a huge grin! My main mission in life is to raise my three and four year old to practice sustainable living and make environmentally friendly choices. I feel this is an essential mindset for humanity moving forward.
My precious babies are my gardening and kitchen companions most of the time and I couldn’t be happier about that!
Our family is moving towards self-sufficiency and tries to live as sustainably as we can. We still live in the city but we grow most of our own organic vegetables and keep our home as chemical free as possible. The ultimate goal would be to live off grid, in beautiful surroundings, completely self-sufficiently. I dream of that day!
I am trying to prepare my children for the possible future they face, where they may have to take care of themselves in ways we don’t yet fully understand. I am hoping we can lessen that impact before they face it on their own, as adults in an uncertain world.
