I was very ill once. When I came out of hospital. I went to a tea room every Tuesday and had ROASTED GREEN CHILI BISQUE. I developed an obsession with green chilis and to this day I can't get enough of them. I developed my own recipe by trial and error which I now present to any chiliheads out there for your perusal and delictation.
3 or 4 poblano chilis 5 or 6 anaheim chilis 1 or 2 jalepenos two litres vegetable stock Juice of 2 limes or a lemon two cloves of garlic, chopped handful of celantro a cup of whipping cream or half and half
roast all the chilis in a hot oven or char them over an open flame till skins are loose and black. Place in a covered bowl or plastic bag for a few minutes so the skin loosens. Peel chilis and deseed. Remove stems. Be carefull to wash hands before touching face or rubbing eyes! In a thick bottomed pot saute garlic for a few minutes on low heat and pour stock in. Add the chilis but reserve one or both jalapenos till the end. Sometimes the other chilis are hot enough without. Add the lemon or lime juice and celantro and simmer with lid for 20 minutes. Ladel soup in small batches into a blender or food processor and blast it till it is a smooth consistency. Taste and season with salt and pepper. Return to the original pot. If it is too thin return to the boil without a lid for a few minutes. Let cool and add cream or half and half. If it is too hot (chemically) add more stock water or cream. If it is not spicy enough for you put the jalapeno(s) in the blender with some of the soup and give it a whirl and add.Serve with fresh chopped celantro or parsley or chives and maybe a few corn chips. It is also a good contrast to chop and add some avacado in the bowls just before serving.Sometimes I also can't resist adding a couple of pepperoncinis from a jar into the blender and pouring in some of the juice too! (I did say I can't get enough). Happy chili to you!
