The next time you make brown rice, quinoa, or millet for dinner, set some of it aside for the next day’s breakfast. This delicious and interesting breakfast shouldn’t take more than a couple of minutes to prepare!

3. Leftover Breakfast Rice

Ingredients:
1 cup leftover brown rice
1 cup soy or cow’s milk
1 Tablespoon butter
1 Tablespoon brown sugar
Fruits, raisins, and nuts for topping

Instructions:
1. In a medium saucepan over medium heat, heat rice in milk and butter.
2. When most of the liquid has been absorbed, stir in brown sugar. Remove from heat.
3. Top with sliced fruit, raisins, nuts, and whatever else you desire.

i liked most of those ideas, not sure on the last one though! i've had soya yoghurt with museli or made my own granola bars in a batch and had those

@Kathy P, I think the count the options they add below...which isn't exactly the same thing because you don't have recipes for those, but I guess they think you can improvise easily.
For breakfast, I try to eat whole wheat...or whole grain bread if I can get it with any combination of things: plantain, cheese, eggs etc
I've had the 'yogurt with fruit' (but not granola which I usually use eat as a snack) breakfast, plain yogurt that is, it's not something I'm used to, but it certainly felt healthy to eat it.

i love the eggs in bell pepper rings idea! cracking eggs into a whole made just for them on a frying pan is fun for some reason!

ah this is perfect. Since college ended, i'v been changing my behaviors to sustain healthy living, and I know it starts with a good breakfast. This list is perfect especially when i'm running late for work, i can make a delicious fruit yogurt parfait.
