In my mind, there is always a need for a handful of go-to recipes that can comprise a healthy, enjoyable and impromptu dinner. Hell, half of the food-related editorial out there is all about recipes that take anywhere from 5 to 30 minutes, and there are countless people that look for these sorts of recipes. While I tend to enjoy the challenge of a multi-step recipe that has a payoff, I am always open for a few straightforward dinner options that can be assembled before you go into a state of hunger and despair. Here are five for spring:
White Beans and Pasta
Cook pasta as per directions and reserve ½ cup of cooking water before draining. Open a can of white beans, drain, and sauté in pan with olive oil over medium heat. Allow to brown a bit, then add some fresh thyme, 2 cloves of minced garlic and stir over heat for another 3 minutes. Toss in pasta with reserve cooking water and serve with a bit of grated cheese on top.
Couscous Mediterranean Style
Cook couscous as per directions on box. Top with good quality sardines (canned or fresh), sliced tomatoes, chopped spinach, mint, olive oil, and sea salt.
Eggs and Asparagus
Cut the rough ends off the asparagus and gently steam for 5 to 7 minutes. Poach an egg and serve immediately over warm asparagus and top with sea salt, pepper and maybe a little oregano or chervil.
Soba Noodles and Pea Shoots
Cook soba noodles according to directions and then immediately rinse in cold water. Toss the noodles in a bowl with a bit of toasted sesame seed oil. Chop up a few pea shoots. Make a dressing of ½ teaspoon of grated ginger, 1 tablespoon of honey or agave, 2 tablespoons of tamari, and 1 teaspoon of sesame oil. Mix well and toss with noodle mixture.
Get some good quality smoked salmon and put it on a slice of toasted and sliced wholegrain or sourdough bread. Sprinkle with chives, lemon zest, and maybe some dill and spread some crème fraiche on the opposing slice of bread. Bring together for a delicious sandwich.
