Applesauce Cake – Recipe

This lovely cake combines delicious taste and the most heavenly fragrance while it bakes. A lovely surprise to have ready when your skaters, skiers, and sledders come home.

INGREDIENTS

½ cup butter, softened
1/3 cup white sugar
1/3 cup brown sugar
3 egg whites, lightly beaten
1 ½ cups applesauce
1 teaspoon cinnamon
1/8 teaspoon ground cloves
½ teaspoon salt
1 teaspoon pure vanilla extract
2 cups unbleached white flour
2 teaspoons baking soda
½ cup sliced dates (optional)
½ cup chopped walnuts (optional)
½ cup raisins (optional)
Confectioner’s sugar

1. Preheat oven to 350. In a large bowl, beat together the butter and sugars until smooth.

2. Add egg whites, applesauce, cinnamon, cloves, salt and vanilla, then mix well. Add the flour and baking soda. Stir until blended, then add the dates, walnuts, and/or raisins, if desired.

3. Pour the batter into a well-buttered Bundt pan. Bake at 350 degrees for 45 minutes, until a toothpick inserted in the center comes out clean. Let the cake cool slightly, then turn it out upside down onto a serving plate. Sprinkle with confectioner’s sugar if desired.
